    red curry paste (see note below for spice level)
  • 2 pounds
    boneless skinless chicken breasts or thighs, cut into bite-size pieces or strips

Quick Cucumber Salad:

  • 1
    English cucumber, thinly sliced
  • 1
    red bell pepper, thinly sliced
  • 2 tablespoons
    fresh lime juice
  • 2 tablespoons
    rice vinegar, can substitute red wine or white wine vinegar
  • 2 tablespoons
    olive oil
  • Salt and pepper, to taste

Instructions

  • In a medium bowl (or in a blender for extra smoothness), combine the almond butter, light coconut milk, fresh lime juice, and red curry paste. Whisk or blend until the mixture is thoroughly combined and silky smooth. Set aside 1 cup of this mixture and refrigerate it; this will be used as a luscious sauce for serving later. Place your cut chicken pieces in a container with a secure lid or a gallon-size Ziploc bag. Pour the remaining marinade over the chicken, ensuring all pieces are evenly coated. Refrigerate for at least 15 minutes to allow the flavors to meld, or for up to 12 hours for deeper penetration.
  • Prepare the quick cucumber salad while the chicken marinates. In a separate medium bowl, combine the thinly sliced English cucumber and red bell pepper.
