A Season of Deep Gratitude, Heartfelt Reflection, and Shared Joy
What a whirlwind this past week and month have been! As the festive glow of the holiday season envelops us, I find myself eagerly anticipating a much-needed break from the fast-paced world of blogging. My heart is set on hunkering down with my wonderful, loud, funny, and busy family, soaking up every last joyous minute of this magical time of year. It’s a precious opportunity to pause, breathe, and truly connect with those who matter most.
While this space often buzzes with my enthusiastic reviews and recipes for what I truly believe is “The Best Food on the Planet,” I’m continually reminded that life extends far beyond delectable dishes and digital diaries. These often poignant, sometimes subtle, reminders ground me, highlighting the rich tapestry of experiences and beliefs that define my existence.
Indeed, nothing in my life would possess true meaning or depth without the sweet, deeply held conviction that this glittering, bustling, and wonderfully chaotic Christmas season exists because of a precious baby. Born thousands of years ago in the most humble of circumstances, He would ultimately become the Savior of the world – for me, and for all of us. This profound truth is the bedrock of my holiday spirit and the source of boundless gratitude. It’s this knowledge that provides a constant compass, continually urging me (and sometimes, delightfully forcing me) to recenter my priorities and realign my perspective, again and again, with what truly matters.
Embracing the Spirit of Giving: A Powerful Partnership with Mentors International
In this cherished season of giving, my thoughts repeatedly return to the incredible generosity you, my dear readers, demonstrated earlier this year. After sharing my transformative experience in Ghana, Africa, many of you opened your hearts and wallets to support Mentors International. Throughout these holidays, your kindness has resonated deeply within me. What you offered was so much more than a mere donation; it was an investment in hope, dignity, and a brighter future. During my time there, I had the privilege of meeting some of the extraordinary individuals whose lives will be fundamentally transformed by your contributions. Because of your selflessness, their circumstances will change for the better. You have truly embodied the profound meaning of giving, and for that, I am eternally thankful.
Thanks to your incredible donations and your enthusiastic purchases of the eCookbook, the collective generosity of MKC readers has reached an astonishing total of $54,571.10 so far, with additional donations continuing to trickle in daily. This level of impact is absolutely incredible! It speaks volumes about the compassion and community spirit that thrives among us.

Just this week, I received an inspiring message from Mark, the CEO of Mentors International, which I simply must share:
“Thank you from the bottom of our hearts for being so generous with the Mentors International families we are helping to lift from poverty with ‘A hand up; not a handout.’ Due in great part to your readers’ generosity, since July 1, 2016, Mentors International has been able to place $120,000 new dollars into the Mentors Ghana loan fund, significantly expanding our reach and impact.”
Mark further detailed the remarkable achievements made possible by your support during that same period:
- Over 1,067 loans were successfully distributed, empowering individuals to build sustainable livelihoods.
- A staggering total of $295,000 was loaned out, fueling small businesses and fostering economic growth within communities.
- An impressive 362 new, active loans were initiated, extending support to even more aspiring entrepreneurs.
- These efforts directly led to the creation of 121 vital jobs, providing stability and income for families.
- Mentors International welcomed 478 new clients, expanding its network of support and mentorship.
- To manage this growth and further enhance services, 2 additional staff members were hired locally.
- Most profoundly, these collective actions have positively impacted an estimated 6,000 people, transforming lives and fostering hope across Ghana.
“This is a HUGE impact. THANK YOU, thank you, thank you!!!!”
I wholeheartedly echo Mark’s sentiments and want to reiterate: Thank you! Your generosity has inspired me in countless ways. The full and far-reaching impact of your kindness may be immeasurable, but its profound effect on thousands of lives is undeniable. You have truly made a difference.
Our Culinary Canvas: Crafting Delicious Holiday Memories
And because, at its heart, this is a food blog, I must take a moment to share a quick note about the delightful culinary plans for Christmas Eve and Christmas Day! Food, for me, is inextricably linked with memory, tradition, and togetherness, especially during the holidays.
Christmas Eve Delights: A Feast of Tradition and Indulgence
Our traditional Christmas Eve meal is a carefully curated feast designed to create lasting memories. This year, the menu includes a special dilemma: choosing between two exceptional desserts! We always indulge in my beloved Creme Brûlée, with its perfectly caramelized sugar crust and creamy vanilla custard – a true classic that never fails to impress. However, I’m also deeply tempted by the new Sticky Toffee Pudding recipe I recently posted. Its warm, moist date sponge soaked in a rich toffee sauce is a revelation. Perhaps, as a true dessert enthusiast, I’ll have to find a way to enjoy both! The rest of our Christmas Eve spread is a carefully guarded family secret, but rest assured, it involves dishes that evoke comfort, celebration, and culinary delight, making for an unforgettable pre-Christmas gathering.
Christmas Day Comforts: Effortless Joy and Festive Flavors
On Christmas Day itself, I prioritize simplicity and ease, allowing me to fully immerse myself in the joy of family without the stress of extensive cooking. My secret weapon? Preparing many dishes in advance! I typically make my delicious cinnamon (or sweet) rolls the day before, ready to bake fresh on Christmas morning, filling the house with an irresistible aroma. For a relaxed afternoon, we enjoy an array of crackers and cheeses, complemented by a selection of festive appetizers. This year, we’re starting a wonderful new tradition for Christmas night: hearty soups served in my favorite, comforting bread bowls. Again, these are all prepared ahead of time, ensuring that I can truly enjoy the day with my loved ones. By this point in the holidays, with all the delicious treats and snacks around, we’ll undoubtedly have food coming out of our ears!
I’m eager to hear about your holiday culinary plans! What delicious traditions will you be enjoying this weekend? Please, please share your festive menus and favorite dishes in the comments below – I love hearing your ideas!
