But if you’re relying on cup measures, keep this in mind: freshly ground whole wheat flour is notably fluffier than store-bought or home-ground flour that has settled and compacted over time.

  • For Freshly Ground Whole Wheat Flour: Gently dip your measuring cup into the flour and lightly shake to level it. Unlike with all-purpose flour where you usually fluff and spoon, a slight compression here helps account for its extra airiness, preventing you from adding too little flour.
  • For Store-Bought or Compacted Flour: Before measuring, make sure to fluff the flour very, very well by stirring it vigorously in its container. Then, either scoop the cup into the fluffed flour and level with a straight edge, or spoon the fluffed flour into the measuring cup and then level. The goal is to avoid over-flouring, which can lead to dry, dense cookies. You want a tender, delightful bite every time!

Cream Wet Ingredients: In a large mixing bowl, using either a handheld electric mixer or a stand mixer fitted with the paddle attachment, combine the brown sugar, granulated sugar, softened coconut oil (or butter), and eggs. Beat these ingredients together for 2-3 minutes until the mixture is light, fluffy, and creamy. This creaming process incorporates air, which contributes to the cookies’ tender texture.
  3. 3. Add Yogurt and Vanilla: Scrape down the sides of the bowl. Add the plain nonfat Greek yogurt and vanilla extract. Mix on low speed until just combined. Be careful not to overmix at this stage; you just want everything to come together smoothly.
  4. 4. Combine Dry Ingredients: In a separate medium bowl, whisk together the white whole wheat flour (remembering the measuring tips!), baking soda, unsweetened cocoa powder, and salt. Whisk well to ensure all leavening agents and cocoa are evenly distributed.
