  • ¼ cup finely diced red onion or green onions
  • ¾ cup shredded parmesan cheese
  • 6-10 fresh basil leaves, cut into strips or torn into pieces, plus more for garnish, if desired
  • ¼ cup basil pesto (see note)
  • ½ to 1 cup toasted pine nuts, optional (see note)

Instructions

  1. Cook the pasta in a large pot of boiling, lightly salted water until al dente, according to package directions. This typically takes about 10-14 minutes for rotini. Ensure the pasta is tender but still has a slight bite. Once cooked, drain the pasta thoroughly using a colander and transfer it immediately to a large mixing bowl.
  2. While the pasta is still warm, add the creamy Caesar dressing. Gently toss the pasta until every piece is evenly coated. The warmth of the pasta helps it absorb the dressing's flavors more effectively, creating a deeply integrated taste.
  3. To the dressed pasta, add the diced roma tomatoes, sliced black olives, finely diced red or green onions, shredded Parmesan cheese, and basil pesto. Notes

Caesar Salad Dressing: The quality of your dressing makes a big difference. Choose a brand whose flavor you genuinely enjoy. Some highly recommended brands include Ken’s, Marzetti, Breanne’s, or Newman’s Own.

Tomatoes: While Roma tomatoes are preferred for their firm texture, you can use other regular tomatoes.
