The Magic of Tomatillos: A Key Ingredient Spotlight

One of the non-negotiable keys to achieving the unique flavor of this sweet tomatillo chipotle pork recipe is, undoubtedly, fresh tomatillos. Often mistaken for green tomatoes, tomatillos are actually part of the nightshade family, encased in a papery husk. Their distinctive tart, slightly fruity, and bright flavor provides the foundational tanginess that beautifully complements the sweetness and smoky spice of the other ingredients.

Thankfully, these vibrant green gems are increasingly easy to find in most average grocery stores, making this gourmet-tasting dish accessible to everyone. The process of preparing them—removing their papery husks and washing away the slightly tacky film underneath—is surprisingly satisfying, especially when you can enlist little helpers for the task. My kids actually enjoy tackling this job, which is a win in my book!

When slow-cooked, tomatillos break down into a luscious, savory, and tangy sauce, imparting that signature “green salsa-ish vibe” that defines this dish. It’s truly fantastic how they transform from firm, tart fruit (or vegetable, depending on who you ask!) into a rich, complex sauce that permeates every strand of pork.

Understanding the Irresistible Flavor Profile

To truly appreciate this pork, imagine a succulent, incredibly tender, and juicy cut of meat that has simmered for hours until it practically melts in your mouth. Now, picture that pork enveloped in a sauce that offers a delicate balance: a subtle sweetness from brown sugar, a smoky warmth from chipotle chiles in adobo, and a vibrant, zesty tang from the tomatillos. The spice level is perfectly calibrated—present enough to awaken your palate without overwhelming it, making it enjoyable for almost everyone.

This isn’t just another sweet and sour dish; it’s a sophisticated interplay of flavors. The tomatillos contribute a freshness and a bright acidity that cuts through the richness of the pork and the sweetness, preventing the dish from being cloyingly sweet. The chipotle chiles, beyond their heat, infuse the sauce with a distinctive smoky depth, adding layers of complexity that make each bite more intriguing than the last. The slow cooking process allows all these elements to meld together seamlessly, creating a harmonious and deeply satisfying flavor experience that is truly unforgettable.

Beyond rice, this versatile pork is perfect for burritos, tacos, enchiladas, or even topping a fresh salad.

Endless Culinary Possibilities: Serving and Freezing

The beauty of this flavorful sweet tomatillo pork lies in its exceptional versatility. While my go-to serving method is simply over hot, fluffy rice for an easy weeknight meal, its deliciousness extends far beyond. The tender, shredded pork is fantastic as a filling for burritos, especially when paired with cilantro lime rice, savory black beans, and a generous sprinkle (or a lot!) of melty cheese. It also makes for incredible tacos, quesadillas, or even a flavorful topping for nachos.

For a lighter option, pile this vibrant pork atop a crisp, green salad—the tangy sauce acts as a perfect dressing, creating a refreshing and satisfying meal. You can also use it to elevate enchiladas, giving them a unique sweet and spicy kick. The possibilities are truly limited only by your imagination. My heart skips a beat just thinking about all the delicious ways to enjoy this pork!

Furthermore, this recipe is a meal prep dream. The leftovers freeze amazingly well, making it ideal for stocking your freezer with ready-to-go meals. Simply portion out the cooked pork and sauce into freezer-safe containers, and you’ll have a gourmet meal at your fingertips for those extra busy days. This convenience ensures that a delicious, homemade meal is always within reach.

Slow Cooker vs. Instant Pot: Why Slow and Low Wins Here

In all my culinary experiments, I’ve actually prepared this sweet pork in both the Instant Pot and the slow cooker. And while I have an enduring love for my Instant Pot – that little machine is a true kitchen workhorse – I wholeheartedly prefer this particular pork made in the slow cooker. The magic truly happens during the long, slow simmer. This extended cooking time allows the flavors to deepen and meld, resulting in a richer, more complex taste that the Instant Pot, with its speed, just can’t quite replicate for this recipe.

Additionally, the slow cooker consistently achieves the perfect ratio of succulent pork to savory sauce. The sauce develops a wonderful consistency that coats the shredded pork beautifully, whereas the Instant Pot can sometimes produce a slightly thinner liquid. However, I understand the undeniable appeal of the pressure cooker for those who need a quicker meal. For all you Instant Pot lovers out there, I’ve included specific hints in the notes section below if you decide to tackle this sweet pork in your IP or another pressure cooker. Rest assured, it will still be delicious, just with a slightly different nuance.

A Special Thanks and Life-Changing Discoveries

A huge thank you goes out to Jess M., a sweet reader who originally inspired this delightful recipe. She sent me a recipe some time ago featuring similar flavors with chicken drumsticks, and after making it, I immediately knew that the fresh tomatillos, spicy chipotles, and hint of sweetness would be absolutely perfect with pork. Her inspiration truly sparked a new favorite in my kitchen!

As you delve into this recipe, make sure to read through the notes for invaluable tips. You’ll find guidance on selecting different cuts of pork to achieve the best results. But perhaps the most exciting discovery I made, which I believe is genuinely life-changing for anyone who cooks with them, concerns chopped, canned chipotle chiles. For years, I would buy small cans, use a fraction of the chiles, and inevitably waste the rest, despite constantly reminding myself (and you!) to freeze the leftovers. Then, I stumbled upon a brand (La Costena) that offers chopped chipotle chiles in a jar, just like jam! Except, of course, much spicier. This revelation means no more wasted chiles and constant access to that incredible smoky heat. Keep an eye out for them – if you share my struggle with leftover canned chipotles, this jarred version will be a game-changer for you too!

Slow Cooker Sweet Tomatillo Chipotle Pork

Yield: 8 servings

Prep Time: 20 mins

Cook Time: 9 hrs

Total Time: 9 hrs 20 mins

Ingredients

  • 3 to 5 pound pork sirloin roast (see note for other cuts of pork)
  • Coarse kosher salt and black pepper
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, finely minced
  • ⅓ cup light or dark brown sugar
  • 2 tablespoons canned chipotle chiles (see note)
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 2-3 pounds tomatillos, about 20-25 tomatillos, husks removed, washed well, and cut in half (or quartered if they are large)
  • 1 cup low-sodium chicken broth
  • Hot cooked rice for serving

Instructions

  1. Season all sides of the pork roast generously with salt and pepper.
  2. Heat the olive oil in a large skillet over medium or medium-high heat until the oil is hot and shimmering. Add the pork roast and brown on each side until golden, about 1-2 minutes per side. This step adds a crucial layer of flavor.
  3. Carefully transfer the browned pork roast to the insert of your slow cooker.
  4. Reduce the heat in the skillet to medium or medium-low. If the skillet seems very dry, add another teaspoon of olive oil. Add the chopped onions and cook, stirring frequently, for 3-4 minutes, making sure to scrape up any delicious brown bits from the bottom of the skillet. Add the minced garlic and cook for an additional 30 seconds or so, until fragrant.
  5. Stir the brown sugar, chipotle chiles, salt, and pepper into the onion mixture in the skillet.
  6. Scrape this flavorful mixture into the slow cooker, placing it alongside the pork.
  7. Add the halved (or quartered, if exceptionally large) tomatillos to the slow cooker. Nestle them around the pork, trying to avoid piling them directly on top. Pour in the low-sodium chicken broth.
  8. Place the lid on the slow cooker and cook on low for 8-10 hours, or on high for 4-5 hours, until the pork is incredibly tender and easily shredded with a fork.
  9. Once cooked, remove the pork from the slow cooker (if boneless and lean, you can shred it directly in the slow cooker). Shred the pork using two forks, then return it to the slow cooker, tossing it thoroughly with the rich cooking liquid and softened tomatillos. Serve immediately over hot, cooked rice. This sweet pork filling is also exceptionally delicious in burritos, tacos, enchiladas, or as a topping for a fresh salad.

Notes

  • Pork Selection: For this recipe, my absolute favorite cut is a pork sirloin roast. It strikes a perfect balance—leaner than a shoulder or butt roast, yet still incredibly tender and juicy when slow-cooked. I often find excellent boneless sirloin roasts in multi-packs at warehouses like Costco. However, I’ve also had success using sirloin roasts with bones; the bone is easily extracted after cooking, making it no inconvenience. While other cuts of pork can be used, the sirloin roast consistently yields the best results for this specific flavor profile.
  • Chipotle Chiles Made Easy: For years, I struggled with partially used cans of chipotle chiles in adobo, often letting the remainder go to waste. My revolutionary discovery has been jarred chopped chipotle chiles, particularly from the La Costena brand. These are incredibly convenient, last much longer in the refrigerator, and ensure you always have that smoky, spicy goodness on hand without waste. Look for them – they are a true game-changer!
  • Tomatillo Preparation: When preparing the tomatillos, it’s crucial not to cut them too small. Halving them is ideal, and only quarter large ones. They will soften and break down significantly during the long cooking process, so larger pieces will ensure they contribute to the sauce’s texture without disappearing entirely.
  • Serving Suggestions: While fantastic over hot rice or quinoa, this versatile pork transforms into a delightful filling for burritos, tacos, or enchiladas. It also makes an excellent, flavorful addition to a crisp green salad, offering a light yet satisfying meal.
  • Freezing for Later: This recipe is perfect for meal planning! The cooked pork, mixed with its sauce, freezes exceptionally well. Simply portion it into airtight containers or freezer bags, and store for up to 3 months. Thaw overnight in the refrigerator and reheat gently on the stovetop or in the microwave for a quick and delicious meal.
  • For Instant Pot Enthusiasts: Although I lean towards the slow cooker for this recipe’s optimal flavor and sauce consistency, it can be made in the Instant Pot for a quicker alternative. For a pork roast approximately 3 inches thick, try cooking it for 30-40 minutes on high pressure, followed by a natural release. Adjust cooking time for thicker or thinner roasts.
