It’s spectacularly flavorful and unbelievably simple to prepare. This recipe brings the beloved essence of Vietnamese banh mi into a convenient, modern flatbread format, perfect for busy weeknights or casual entertaining.

Understanding the Banh Mi Experience

A quick culinary primer: “Banh mi” is a Vietnamese term meaning “bread” or, more broadly, a “meat-filled sandwich.” These iconic sandwiches are renowned for their symphony of flavors and textures, typically featuring savory meats, pâté, fresh herbs, and, crucially, a generous helping of tangy pickled vegetables and savory sauces, all nestled within a crisp baguette. What makes banh mi so appealing is its incredible versatility; there isn’t one definitive recipe. Just like there are countless variations of a classic chocolate chip cookie, so too are there myriad interpretations of a great banh mi, allowing for delightful culinary exploration.

My personal love affair with sandwiches runs deep. Years ago, after a period of restrictive eating following cancer treatment, my very first post-radiation request to my husband was for “the best sandwich ever.” He delivered, and it was so profoundly delicious that I actually shed tears of joy. That experience solidified my belief in the power of a truly great sandwich to bring comfort and happiness.

I’ve previously raved about my Banh Mi Meatball Sub, a bold claim for “favorite sandwich ever.” While perhaps not strictly traditional, it captures the simple, irresistible banh mi flavors using readily available ingredients, making it perfect for home cooking. It was only a matter of time before these cherished flavors, combined with my affection for dishes like Thai Chicken Crunch Wraps, led me to create this Mel’s fusion-style banh mi on a flatbread.

And speaking of flatbreads: spoiler alert, I adore them! (You can find my favorite homemade flatbread recipe here, but high-quality store-bought options like stone-baked naan from Costco work absolutely fantastically for this recipe.) The soft, pliable base creates the perfect canvas for all the vibrant toppings.

What Makes This Banh Mi Flatbread Truly Special

The magic of this banh mi flatbread lies in two pivotal elements that elevate it from good to extraordinary:

  1. The Dynamic Duo of Sauces: We’re talking about not one, but two incredible sauces that layer sweet, savory, creamy, and spicy notes for an unparalleled flavor experience. Double the sauce means double the fun and flavor!
  2. The Essential Quick-Pickled Vegetables: These aren’t just a garnish; they are 100% mandatory for achieving that complete explosion of flavor and texture. The vibrant tang and satisfying crunch of the pickles perfectly complement the tender flatbread, savory chicken, and rich, sweet, and spicy sauces. It’s a textural masterpiece that will transport you to a culinary happy place.

The combination of these elements creates a dish that is deeply satisfying and incredibly complex in taste, yet surprisingly simple to put together.

A huge bonus is that almost everything can be prepared in advance, turning dinner time into a simple matter of assembly and digging in. This makes it an ideal option for meal prepping or when you need a speedy, yet impressive, dinner solution.

You can savor them with a fork and knife, pick them up like mini pizzas, or fold them like a taco for a more handheld experience. This recipe embraces flexibility and culinary freedom, allowing you to enjoy these fusion delights however you please (even if it makes traditional banh mi purists raise an eyebrow!).

If you’re a fan of bold, Asian-inspired fusion flavors that are both crazy delicious and refreshingly unique, this recipe is tailor-made for you. And even if it initially seems a little outside your culinary comfort zone, we wholeheartedly encourage you to give it a try – you might just discover your new favorite meal!

Ingredients

Flatbread & Chicken:

  • 6 flatbreads or naan
  • 1 ½ pounds cooked chicken, grilled or rotisserie works great here
  • Fresh, chopped cilantro

Creamy Sauce:

  • 1 cup mayonnaise or plain Greek yogurt
  • 2 tablespoons freshly squeezed lime juice
  • 1 tablespoon (more or less to taste) hot sauce/sriracha or sweet Thai chili sauce
  • 1 green onion or a couple chives, finely chopped (optional)

Vegetable Relish:

  • 2 large carrots, peeled and cut into thin matchsticks
  • 1 English/seedless cucumber, cut into thin matchsticks
  • 2 tablespoons granulated sugar
  • 2 tablespoons rice vinegar
  • 1 teaspoon sesame oil, can use toasted sesame oil
  • ½ teaspoon coarse, kosher salt

Sweet and Spicy Hoisin Sauce:

  • ⅓ cup sweet Thai chili sauce
  • ¼ cup hoisin sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons soy sauce

Instructions

  1. For the creamy sauce: Whisk together all the ingredients in a small bowl until smooth. This sauce can be made several days in advance and stored in the refrigerator.
  2. For the vegetable relish: Place the carrot and cucumber matchsticks in a medium bowl or container. In a separate small bowl, whisk together the granulated sugar, rice vinegar, sesame oil, and kosher salt until the sugar is dissolved. Pour this mixture over the vegetables and toss to coat well. While the relish can be used immediately, it tastes best if allowed to marinate for at least an hour in the refrigerator. It can also be prepared a day in advance.
  3. For the sweet and spicy hoisin sauce: In another small bowl, whisk together all of the ingredients until well combined. Like the creamy sauce, this can be prepared several days in advance and refrigerated.
  4. To assemble: If desired, lightly warm the flatbread or naan to make it more pliable and soft. This step is optional and depends on the type of bread you are using.
  5. Spread a generous layer of the creamy sauce over each flatbread. Top with the cooked chicken, a heap of the tangy vegetable relish, a drizzle of the sweet and spicy hoisin sauce, and a sprinkle of fresh chopped cilantro for garnish (optional, but highly recommended for flavor). Serve immediately and enjoy!

Notes

Flatbread: We highly recommend trying this fantastic homemade flatbread recipe for an extra special touch. These flatbreads are typically served at room temperature, much like a sandwich, but you can experiment with warming them slightly if preferred.

Prep Time: The stated prep time assumes that your chicken is already cooked and shredded (if using homemade flatbread, please factor in that cooking time separately). Leftover grilled chicken or a store-bought rotisserie chicken are excellent time-saving options for this recipe.

Make-Ahead Tip: As mentioned, both sauces and the vegetable relish can be prepared at least a day in advance, making this an ideal dish for easy entertaining or quick weeknight meals. The flavors deepen beautifully with a little time!
