- 10-13 pound turkey, thawed or fresh
- Coarse kosher salt
- Freshly ground black pepper
- ½ cup (113 g) salted butter, softened

- 1 whole lemon, zested
- 1 medium onion, skin removed and quartered
- Bunch of parsley
- 1-2 medium carrots, chopped into thirds
- 1-2 celery stalks, chopped into thirds
Instructions

Preheat your oven to 350 degrees F (175 degrees C).

Remove the giblets and neck from the turkey cavity and discard or save for gravy. Place the turkey on a rack set in a large roasting pan.

In a small bowl, combine the softened salted butter, fresh thyme (or dried), and lemon zest. Mix until well combined.
