  • 1 (15-ounce) can (425 g) solid pack pumpkin (not pie filling)
  • 1 cup (227 g) salted butter, softened to room temperature
  • 1 ½ cups (318 g) granulated sugar
  • ½ cup (106 g) packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup (43 g) cocoa powder
  • 3 ¾ cups (533 g) all-purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons pumpkin pie spice, see note for a homemade version
  • ½ teaspoon salt
  • ½ to 1 cup (about 85 to 170 g) mini chocolate chips
  • Quart of good-quality vanilla ice cream, may not use it all

Instructions

  • Preheat your oven to 350 degrees F (175 degrees C). Prepare baking sheets by lining them with Silpat mats or parchment paper.
  • In a small bowl, thoroughly whisk together the cocoa powder, all-purpose flour, baking powder, pumpkin pie spice, and salt. Set this dry mixture aside.
  • In a large mixing bowl (or the bowl of a stand mixer fitted with the paddle attachment), combine the solid pack pumpkin, softened salted butter, granulated sugar, and packed light brown sugar. Beat with an electric mixer on medium speed until the ingredients are well blended and creamy. Add the large eggs one at a time, mixing well after each addition, then stir in the vanilla extract. Continue mixing for 1-2 minutes until light and fluffy.
  • Gradually add the reserved flour mixture to the wet ingredients, stirring on low speed until just combined. Be careful not to overmix the dough. Gently fold in the mini chocolate chips until evenly distributed.
  • Drop heaping tablespoonfuls of cookie batter onto the prepared baking sheets, leaving enough space between them for spreading. Bake for 14-15 minutes, or until the edges are set and the centers are still slightly soft. Immediately upon removing the cookies from the oven, use the bottom of a flat glass to gently press down on each cookie until they are about 1/4- to 1/2-inch thick.   • Once the cookies are entirely cool, begin assembling the sandwiches. Scoop about 3 tablespoons (a generous spoonful) of good-quality vanilla ice cream onto the flat bottom of one cookie. Place another cookie, flat side down, on top of the ice cream, gently pressing to create a sandwich. Working quickly to prevent excessive melting, roll the edges of the ice cream sandwich in additional mini chocolate chips, pressing them gently with your fingers to adhere if needed. Immediately place each completed ice cream sandwich into the freezer. Continue with the remaining cookies and ice cream.
  • Freeze the ice cream sandwiches for a minimum of 2-3 hours, or preferably overnight, to allow them to firm up completely. For long-term storage, wrap each individual ice cream sandwich tightly in plastic wrap before returning them to the freezer.

Notes

Pumpkin Pie Spice: If you don’t have pumpkin pie spice on hand, you can easily make your own. Combine 1 teaspoon ground cinnamon, ½ teaspoon ground ginger, ¼ teaspoon ground nutmeg, and ¼ teaspoon ground cloves. Mix these together, and you will have approximately 2 teaspoons of homemade pumpkin pie spice.

Pumpkin Puree: The original recipe for these cookies suggested roasting the pumpkin puree (by spreading it on a greased, foil-lined baking sheet) for 20 minutes to achieve a more concentrated pumpkin flavor. While I skipped this step to simplify the process, if you have the extra time and desire a more intense pumpkin taste, feel free to roast it first. Ensure it cools completely before incorporating it into the recipe.

Halving the Recipe: This recipe is easily adjustable. If you prefer a smaller batch, all ingredients can be halved without affecting the outcome.
