Amish-Style Apple and Cinnamon Baked Oatmeal: Your New Favorite Make-Ahead Breakfast

As the bustling routine of back-to-school mornings descends upon us, the challenge of preparing a wholesome and delicious breakfast often takes a backseat. While much attention is given to packing nutritious school lunches, the importance of starting the day with a satisfying meal cannot be overstated. Today, we’re diving into a breakfast solution that promises both ease and flavor: a wonderful Amish-style apple and cinnamon baked oatmeal that is sure to become a beloved staple in your household.

This delightful baked oatmeal stands out in our repertoire of morning meals. We’ve certainly enjoyed other variations of overnight and baked oatmeal recipes, frequently rotating them into our menu. However, when my cousin-in-law, Julianne, shared this particular Amish-style apple and cinnamon baked oatmeal recipe, I was instantly intrigued. I recall trying it almost immediately – seriously, within minutes of reading her email, even if it was late in the afternoon! Its promise of simplicity and comforting flavors was too good to resist.

Why Baked Oatmeal is a Game Changer for Busy Mornings

One of the most appealing aspects of this Amish-style baked oatmeal is its incredible versatility and convenience. Not only can you whip it up and bake it right away, but it also shines as a make-ahead meal. Imagine preparing it in the evening, covering it, and popping it into the refrigerator overnight. Then, come morning, simply slide it into the oven for a warm, fragrant breakfast with minimal effort. This “dreamy” part is truly what makes it a lifesaver for anyone who cherishes those extra minutes of sleep, especially during the hectic school week.

Despite taking only a few minutes to assemble, I’m certainly not one to willingly wake up earlier than necessary. Yet, for this apple and cinnamon baked oatmeal, I’ve found myself embracing a slightly earlier start to the day. Since it requires approximately 35-45 minutes to bake to golden perfection, I’ve made the conscious decision to rise a little ahead of the general wake-up call. And, dare I say it, instead of retreating back to bed while the oven works its magic, I’ve even found myself reluctantly engaging in a quick exercise routine. It seems this delicious oatmeal possesses the power to inspire even the most summer-sloth-like habits back into action. Consider it an “oatmeal miracle” if you will!

A Meal for Any Time of Day: Beyond Breakfast

While traditionally a breakfast dish, this baked oatmeal is so satisfying that it earned a spot on our dinner table shortly after Julianne shared the recipe. Following her suggestion to enjoy it with hard-boiled eggs and yogurt, we gave “breakfast-for-dinner” a try, and it was absolutely delightful. If the idea of a comforting, hearty meal at any time of day appeals to you, this baked oatmeal fits the bill perfectly. Its versatility means you can savor it for breakfast, dinner, or any time in between.

The beauty of this recipe also lies in its adaptability. While apples and cinnamon create a classic, warm flavor profile, you can easily omit the apples for a simpler, regular baked oatmeal variation. The resulting dish is always seriously delicious – boasting a delightful crunch on top, giving way to a creamy, warm, and hearty texture throughout. It’s the kind of comfort food that nourishes both body and soul.

The Hearty Goodness of Amish-Style Baked Oatmeal

Amish-style cooking is renowned for its simplicity, use of wholesome ingredients, and deeply comforting flavors. This baked oatmeal embodies those qualities perfectly, bringing a touch of homey goodness to your kitchen. Oats are a powerhouse of nutrition, rich in fiber, and provide sustained energy, making them an excellent choice to kickstart your day. When combined with the sweet and tart notes of apples and the warming spice of cinnamon, the result is an irresistible aroma and a truly satisfying meal.

Choosing Your Apples and Other Ingredients

For this recipe, we recommend using large tart-sweet apples like Honeycrisp or Gala. Their balanced flavor holds up beautifully during baking, offering delightful pockets of fruitiness in every bite. Peeling, coring, and dicing them ensures they soften evenly and meld seamlessly with the oats. The brown sugar provides a caramel-like sweetness, which you can adjust to your preference – a little more if you enjoy a sweeter dish, or a little less for a more subdued flavor. Old-fashioned rolled oats are key here, as they provide the ideal texture once baked, absorbing the liquids to create a creamy consistency without becoming mushy like instant oats might. The combination of milk, eggs, and vanilla creates a rich, custardy base that binds the oatmeal together, while baking powder gives it a slight lift and a tender crumb.

Making it Your Own: Variations and Serving Ideas

This Amish-style baked oatmeal is a fantastic canvas for your creativity. While we love the classic apple and cinnamon combination, consider these delightful variations:

  • Nuts and Dried Fruit: If you enjoy added texture and sweetness, feel free to fold in a half cup of chopped walnuts, pecans, or dried cranberries/raisins to the dry ingredients before adding the liquid mixture.
  • Spice it Up: A pinch of ginger or allspice could complement the cinnamon and nutmeg beautifully for an even warmer spice profile.
  • Different Fruits: Experiment with other diced fruits like pears, peaches, or mixed berries (fresh or frozen) for a seasonal twist.
  • Toppings Galore: Beyond a splash of milk, serve your baked oatmeal with a dollop of Greek yogurt, a drizzle of maple syrup or honey, a sprinkle of granola for extra crunch, or even a spoonful of apple butter for an intensified apple flavor.

Whether you’re preparing this for a leisurely weekend brunch or as a quick weekday breakfast, its comforting flavors and delightful texture are guaranteed to impress. It’s a truly satisfying dish that caters to a wide range of tastes and dietary preferences.

Ingredients

  • 3 cups (300 g) old-fashioned rolled oats
  • 1 ½ teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¾ teaspoon salt
  • ½ cup (106 g) lightly packed brown sugar, more to taste if you like things a bit sweeter
  • 2 ½ cups milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 4 tablespoons butter or coconut oil, melted
  • 2-3 large tart sweet apples (like Honeycrisp or Gala), peeled, cored and diced

Instructions

  1. Lightly grease an 8×12-inch or 9×13-inch baking pan, or a 9×9-inch pan (for super thick oatmeal) with nonstick cooking spray and set aside. Preheat the oven to 325 degrees F (do not preheat if making ahead of time and refrigerating overnight).
  2. In a large bowl, whisk together the oats, baking powder, cinnamon, nutmeg, salt, and brown sugar.
  3. In a large liquid measuring cup or medium bowl, whisk together the milk, eggs, and vanilla.
  4. Pour this wet mixture over the dry ingredients and add the melted butter or coconut oil. Stir or whisk to combine thoroughly.
  5. Arrange the diced apples evenly over the bottom of the prepared baking dish. Pour the oatmeal mixture over the top of the apples. At this point, you can cover and refrigerate the dish overnight, or bake it immediately (remember to uncover before baking the next morning).
  6. Bake for 35-45 minutes, or until the top is golden brown, the mixture is set, and it is no longer overly jiggly in the center.
  7. Serve warm or at room temperature, optionally with a little milk poured over the top for added creaminess.

Notes

Add-Ins: While I prefer my oatmeal without nuts or raisins, feel free to incorporate one or both into the dry ingredients before mixing in the milk/egg mixture if you enjoy them.

Make-Ahead Tip: If you prepare this dish ahead of time and refrigerate it overnight, some of the apple pieces might rise to the surface and brown slightly. This is completely normal and does not affect the delicious taste.

Apple Omission: For a simple, standard Amish-style baked oatmeal, you can certainly omit the apples. If baking in a smaller pan, such as a 9×9-inch pan, you might want to reduce the apple quantity to two instead of three.

Pan Size: This recipe is quite flexible regarding pan size. Using a smaller pan will result in a thicker baked oatmeal. Just be sure to monitor the baking time and adjust as needed to ensure it is cooked through.
