And this year, we’re kicking things off with a recipe so spectacular, it might just outshine all others: a homemade Pumpkin Chocolate Chip Streusel Cake that perfectly captures the essence of fall.

The Quintessential Fall Dessert: Pumpkin, Chocolate, and Streusel Perfection

This isn’t just another pumpkin recipe; it’s a celebration of everything wonderful about autumn baking. Imagine a deeply flavored, incredibly moist pumpkin cake, generously studded with melty chocolate chips, and crowned with a sweet, buttery streusel topping. Each bite delivers a harmonious blend of warm spices, rich chocolate, and a delightful textural contrast from the crunchy streusel. It’s the kind of dessert that makes your kitchen smell like a dream and brings pure joy to every occasion, big or small.

We believe that adding streusel to almost any dessert elevates it to a whole new level of deliciousness. And when it comes to a classic pumpkin cake, streusel is the crowning glory. It introduces a delightful crumble and extra sweetness that complements the tender cake beneath. Paired with a generous scattering of chocolate chips, this cake transforms from a simple treat into an extraordinary dessert that’s impossible to resist.

A Recipe Elevated: From Blondies to Bestselling Cake

This incredible Pumpkin Chocolate Chip Streusel Cake is inspired by one of our long-standing favorite recipes: easy pumpkin blondies with chocolate chips. Those blondies, tucked away in our archives, always delivered on flavor and moisture. But we saw an opportunity to take that beloved base and enhance it, adding layers of texture and richness to create something truly special for fall.

The transformation involves a magical streusel topping, a buttery, cinnamon-spiced crumb that adds an irresistible crunch. And because we believe you can never have too much chocolate, we boosted the chocolate chip content, ensuring pockets of melted chocolate in every single bite of the cake, as well as a beautiful sprinkle atop the streusel. This double dose of chocolate, combined with the warm pumpkin and spicy streusel, creates a symphony of flavors that will have everyone reaching for a second slice.

While we typically prefer our desserts without nuts, a small scattering of toasted pecans on top of the streusel could add another layer of nutty crunch and depth. Feel free to experiment and let us know your favorite additions!

Baking Tips for the Perfect Pumpkin Chocolate Chip Streusel Cake

Achieving the perfect texture for this pumpkin cake is easier than you think. Here are a few tips to ensure your cake turns out moist, tender, and utterly delicious every time:

  • Pan Choice Matters: We highly recommend using a straight-sided metal 9×13-inch baking pan. Metal pans conduct heat more evenly and tend to produce a more consistent bake with lovely browned edges. If you opt for a glass pan, remember to reduce your oven temperature by 25 degrees Fahrenheit to prevent over-browning and ensure the center bakes through properly. Lightly grease your pan with nonstick spray, or line it with parchment paper for effortless removal and cleanup.
  • Room Temperature Ingredients: For the best results, ensure your butter and egg are at room temperature. This allows them to cream together more smoothly, creating an emulsified batter that traps air, resulting in a lighter and more tender cake.
  • Don’t Overmix: When adding the dry ingredients to the wet, mix only until just combined. Overmixing can develop the gluten in the flour, leading to a tougher, denser cake. A few streaks of flour are perfectly fine and will disappear during baking.
  • The Magic of Applesauce: Unsweetened applesauce contributes to the cake’s incredible moisture without adding excessive fat or sugar. It’s a secret ingredient that helps keep this cake delightfully tender.
  • Check for Doneness: Bake until the edges of the cake begin to pull away from the sides of the pan, and a toothpick inserted into the center comes out clean or with just a few moist crumbs attached. Avoid overbaking, as this can dry out your cake.
  • Cooling is Key: While it’s tempting to dive right in, allow the cake to cool completely in the pan before slicing. This allows the cake to set properly and prevents it from crumbling when cut. The flavors also deepen as it cools.

Serving Suggestions: From Casual Bars to Elegant Dessert

This versatile Pumpkin Chocolate Chip Streusel Cake adapts beautifully to any serving style. Once cooled, it can be cut into smaller squares, making perfect finger-food “bars” for potlucks, lunchboxes, or a casual snack. They’re fantastic at room temperature, offering a satisfying bite of fall flavor.

But for a truly indulgent experience, we insist you try a generous slice served ever-so-slightly warm. The warmth enhances the aroma of the spices and softens the chocolate chips into gooey pockets of bliss. And for the ultimate pairing? A scoop (or two!) of high-quality vanilla ice cream. The creamy, cool ice cream provides a wonderful contrast to the warm, spiced cake. If you’re feeling adventurous, consider a pumpkin caramel ice cream (Trader Joe’s often has a fantastic one!) or a rich caramel crunch ice cream to elevate the flavors even further. Imagine the sweet, buttery streusel melding with melting ice cream – pure dessert heaven!

This loaded pumpkin chocolate chip cake truly is a showstopper. It demands attention, and rightfully so. Its inviting aroma, stunning appearance, and irresistible taste make it the centerpiece of any fall gathering, from holiday tables to casual family dinners. So go ahead, embrace the season, and bake up this magnificent dessert!

Ingredients

Cake:

  • 2 ⅓ cups (331 g) all-purpose flour
  • 1 tablespoon pumpkin pie spice (see note)
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • ¾ teaspoon salt
  • ½ cup (113 g) salted butter, softened to room temperature
  • ½ cup (113 g) unsweetened applesauce
  • ¾ cup (159 g) granulated sugar
  • ¾ cup (159 g) packed light brown sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 (15-ounce) can pumpkin puree, (about 2 cups, not pumpkin pie filling)
  • 1 ½ cups (255 g) semisweet chocolate chips

Streusel:

  • 1 cup (142 g) all-purpose flour
  • ¾ cup (159 g) packed light brown sugar
  • 1 teaspoon ground cinnamon
  • Pinch of salt
  • ½ cup (113 g) salted butter, cut into tablespoon-size pieces and softened to room temperature
  • ½ cup (85 g) semisweet chocolate chips
  • ½ cup (57 g) toasted pecans (optional)

Instructions

  • Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch metal baking pan with nonstick cooking spray, or line it with parchment paper for easy cleanup.
  • In a medium bowl, whisk together the flour, pumpkin pie spice, ground cinnamon, baking soda, and salt. Set this dry mixture aside. In a large bowl, using a stand mixer or a handheld electric mixer, cream together the softened butter, unsweetened applesauce, granulated sugar, and light brown sugar on medium-high speed until the mixture is smooth and light. Beat in the egg and vanilla extract until well combined. Add the canned pumpkin puree and mix until fully incorporated. Don’t worry if the mixture appears slightly curdled at this stage; it will come together.
  • Gradually add the reserved dry ingredients to the wet mixture, mixing on low speed or stirring by hand just until combined. Be careful not to overmix. Gently fold in the 1 ½ cups of chocolate chips.
  • Spread the cake batter evenly into the prepared 9×13-inch baking pan.
  • To prepare the streusel topping, combine the flour, light brown sugar, cinnamon, and a pinch of salt in a small bowl. Add the softened butter, cut into tablespoon-size pieces. Using a pastry blender or your fingertips, mix until the streusel mixture is evenly combined and forms small, cohesive clumps.
  • Evenly sprinkle the streusel mixture over the pumpkin cake batter. Follow with the remaining ½ cup of chocolate chips and, if desired, the toasted pecans.
  • Bake in the preheated oven for 35 to 40 minutes, or until the edges of the cake begin to pull away from the sides of the pan and a wooden toothpick inserted into the center comes out clean or with just a few moist crumbs attached. Let the cake cool completely in the pan before slicing and serving. This cake is delightful at room temperature or slightly warm, and absolutely divine with a scoop of vanilla ice cream!

Notes

Homemade Pumpkin Pie Spice: If you don’t have store-bought pumpkin pie spice, you can easily make your own! For the equivalent of 1 teaspoon, mix ½ teaspoon ground cinnamon, ¼ teaspoon ground ginger, ⅛ teaspoon ground nutmeg, and ⅛ teaspoon ground cloves. Since this recipe calls for 1 tablespoon (3 teaspoons) of pumpkin pie spice, you’ll want to triple these amounts to create 1 ½ teaspoons ground cinnamon, ¾ teaspoon ground ginger, ⅜ teaspoon ground nutmeg, and ⅜ teaspoon ground cloves.
