  • ½ cup buttermilk
  • 2 cups blueberries (see note below for fresh, frozen, or freeze-dried)

Instructions

  1. Preheat the oven to 350 degrees F (175°C). Line two 12-cup muffin tins with paper or parchment liners. Set aside.
  2. With an electric handheld mixer (or in the bowl of a stand mixer fitted with the paddle attachment), cream together the softened cream cheese, butter, and sugar until the mixture is light and fluffy, about 1-2 minutes.
  3. Add the eggs, vanilla extract, and buttermilk to the creamed mixture. Mix again until all ingredients are well-combined, scraping down the sides of the bowl as needed to ensure everything is incorporated.

Notes

Blueberries: I have consistently used freeze-dried blueberries in this recipe with excellent results. My friend, Heather, who shared this recipe, prefers fresh blueberries. While I haven’t tested frozen blueberries, I anticipate they would work well; however, ensure you do not thaw them before adding to the batter to maintain muffin texture.

Lemon: I haven’t tried it myself, but I imagine a subtle hint of fresh lemon zest added to this muffin batter would elevate them to an even higher level of deliciousness. And, just for fun, try not to imagine how utterly delightful a light lemon-powdered sugar glaze would be drizzled over the cooled muffins. It would surely be terrible. Absolutely terrible.
