This easy one-pot zucchini pasta mixes small pasta, a generous tomato sauce, shredded zucchini and Parmesan for a simple, flavorful family dinner.
Perfect for busy weeknights, this one-pot saucy zucchini pasta is fast, comforting, and versatile. Serve it as a satisfying meatless meal or add meatballs for extra protein. The dish stretches garden zucchini into every bite while keeping prep and cleanup minimal.

Why You Should Make This One-Pot Pasta
This recipe became a staple last summer when my garden produced an abundance of zucchini. It shows how a few pantry staples and a single pan can deliver a deeply satisfying meal. The sauce stays saucy, the zucchini melts into the pasta, and the whole dish comes together quickly with minimal fuss.
Top reasons to make this one-pot zucchini pasta:
- One-pot cooking means fewer dishes and easy cleanup.
- Shredded zucchini adds vegetables discreetly — perfect for picky eaters. Grating on the small holes blends it into the sauce; larger holes give more texture.
- Made from everyday pantry ingredients that are easy to keep on hand.
- Frozen shredded zucchini works well, so you can enjoy this year-round.
- No need to pre-thaw or drain fresh zucchini; the extra liquid helps create a saucier pasta. For frozen zucchini, drain excess water if it’s very watery.

Important Ingredient Notes
- Small pasta: Choose small shapes like small shells, elbow macaroni, ditalini, or similar. Twelve ounces is about three cups.
- Pasta sauce: A good quality jarred pasta sauce makes this simple and delicious. If using 24-ounce sauce instead of 28-ounce, add about 1/2 cup extra water or tomato sauce.
- Milk: The milk adds creaminess so the finished dish isn’t strictly marinara. 1%, 2% or whole milk works well. Unsweetened non-dairy milks should also be fine.
- Seasonings: Dried basil and oregano add background flavor. Stir in fresh basil at the end for a bright finish, if available.
- Shredded zucchini: No need to peel — just trim the ends and shred on the small or large holes of a box grater. You’ll need roughly one medium zucchini (10–11 ounces) for this recipe.
- Parmesan: Freshly grated Parmesan melts best and gives the creamiest texture. Serve extra at the table for sprinkling.
Cooking note: Authentic or thicker pasta shapes may require more cooking time and extra liquid. Add additional water as needed while simmering and adjust cooking time until pasta is tender.

Additional Notes
- Different pastas cook at different speeds. If your pasta requires longer than the listed cook time, add a little more liquid and continue simmering until tender.
- To prevent sticking, maintain a gentle simmer, stir often, and add small amounts of water if the sauce becomes too thick or the pasta starts to cling to the pan.
- This pasta is delicious as a meatless main, and it pairs nicely with baked or cooked meatballs stirred in at the end so they’re coated in sauce.
This has been my go-to summer meal when zucchini is abundant: saucy, comforting, and ready in about 30 minutes without heating the oven.

Easy One-Pot Saucy Zucchini Pasta
Yield: 6 servings | Prep Time: 10 mins | Cook Time: 20 mins | Total Time: 30 mins
Ingredients
- 12 ounces small pasta (small shells, elbow macaroni, ditalini), about 3 cups
- 28-ounce jar pasta sauce (about 3 cups)
- 2 cups water
- 1 cup milk (1%, 2% or whole)
- 1 teaspoon salt
- 1 teaspoon dried basil
- 1/2 teaspoon dried oregano
- Pinch crushed red pepper (optional)
- 2 to 3 cups shredded zucchini (no need to peel), about one medium 10–11 ounce zucchini
- 1/2 cup freshly grated Parmesan cheese, plus extra for serving
Instructions
- In a deep skillet or wide saucepan combine the pasta, pasta sauce, water, milk, salt, dried basil, dried oregano and crushed red pepper (if using).
- Bring the mixture to a gentle simmer over medium heat, stirring often. Maintain a gentle simmer and continue cooking for 8–9 minutes, stirring frequently to prevent sticking.
- Stir in the shredded zucchini and simmer 2–3 more minutes, stirring often, until the pasta is tender. Add extra cooking time if your pasta needs it; add a little water as required to keep the sauce loose and prevent sticking.
- Remove from heat and stir in the Parmesan cheese. Taste and adjust salt if needed.
- Serve warm with additional Parmesan on the side. Note: the pasta will thicken as it rests.
- Optional: if serving with meatballs, cook the meatballs separately and stir them into the pasta at the end so they are coated in sauce.
Notes
Pasta sauce: If using 24 ounces of jarred sauce, add 1/2 cup extra water or tomato sauce to reach the saucy consistency called for. You can also substitute 28 ounces crushed tomatoes—if you do, consider doubling the dried herbs and adding 1 teaspoon brown sugar and a splash of soy sauce for balance.
Zucchini: Trim the ends and shred on the small or large holes of a box grater depending on the texture you prefer. Fresh or frozen shredded zucchini both work well; drain excess liquid from frozen zucchini if it is very watery.
