The Journey to a Safer, Simpler Dulce de Leche Method
Let me rewind a bit and share how I stumbled upon this culinary revelation. A week or so ago, a brilliant blogging friend, Amy M., who has an absolutely impeccable palate for food, emailed me with exciting news. She had discovered an incredible method: boiling a can of sweetened condensed milk in water, then stirring in a touch of vanilla for the most divine dulce de leche she had ever tasted. I confessed to Amy that while I had heard of this traditional method, it filled me with dread, much like pressure cookers in general. The thought of an exploding can of scalding hot sugar made me incredibly nervous, and I’m sure I’m not alone in that apprehension. Amy, probably rolling her eyes at my excessive caution, assured me it wasn’t a big deal, especially if one kept a careful eye on the water level and replenished it as needed. Still, the fear lingered.

My concern wasn’t just about safety; I had another reservation about boiling sealed cans. A bit of research revealed potential risks concerning BPA (Bisphenol A) toxins leaching from the can’s lining into the milk during prolonged boiling. This realization led me down a different path: the canning jar theory. Given that I have a veritable treasure trove of canning jars sitting idle in my basement, I decided to put them to good use and try an alternative method – the slow cooker. And just like that, two major concerns were effortlessly resolved:
Toxin risk? Eliminated.
Explosion risk? Eliminated.

The Slow Cooker Magic: Transforming Sweetened Condensed Milk
With safety and health concerns addressed, the only remaining question was: could this method truly produce the ethereal, dreamy dulce de leche I envisioned? I was eager to find out! I carefully opened two 14-ounce cans of sweetened condensed milk and divided their contents equally among three half-pint canning jars. After wiping the rims clean and securing them with lids and rings, I placed these magical jars into my slow cooker. I then covered them with water, ensuring there was about an inch of water above the jar tops. The orientation of the jars doesn’t matter – whether they’re standing upright or lying on their sides, whatever fits best in your slow cooker will work. I set my slow cooker to low and let it work its magic for 8 and a half hours. This truly is an overnight solution, baby! And oh, my friends, the results were nothing short of life-changing. What emerged from that slow cooker was pure, golden, glorious dulce de leche. A quick stir of a little vanilla extract into each jar elevated it to absolute perfection.
Endless Ways to Enjoy Your Homemade Dulce de Leche
For weeks now, this silky, smooth homemade dulce de leche has been a staple in our household. We’ve been enjoying it in countless ways. Crisp apple slices dipped into its creamy embrace have become an irresistible snack. Warm it slightly, and it transforms into a decadent drizzle over vanilla ice cream, turning a simple scoop into an extraordinary dessert. My husband, ever the enthusiast, insists I highlight right here and now just how divine this caramel is when slathered over fresh banana slices. He claims it’s a match made in heaven!
But the possibilities don’t end there! Imagine spreading this luscious caramel over warm crepes for a sophisticated breakfast, or using it as a decadent filling for cakes, cupcakes, or even sandwich cookies. It’s fantastic swirled into your morning coffee or hot chocolate for an extra layer of richness, blended into milkshakes, or used to make thumbprint cookies. You can also incorporate it into homemade caramels, stir it into oatmeal, or use it to elevate sweet breads like banana or zucchini bread. Whether cold, at room temperature, or gently warmed, its versatility makes it an indispensable pantry item for any dessert lover. Seriously, what are you waiting for? Make some!
It’s truly easy-peasy-lemon-squeezy, and I’m honestly left wondering how I ever managed to live without a constant supply of homemade dulce de leche in my kitchen before now. A huge thank you to Amy for getting those culinary wheels spinning and inspiring this fantastic, hands-off method!

Ingredients
- 2 cans (14-ounces each) sweetened condensed milk
- 1-2 teaspoons pure vanilla extract or vanilla paste, optional, for enhanced flavor
- 3 1/2 pint canning jars with lids and rings
- Water
Instructions
-
Open the cans of sweetened condensed milk and carefully pour the contents, portioning them equally, into the three half-pint canning jars. If any milk spills, wipe the tops and sides of the canning jars thoroughly to ensure a clean seal. Securely place a lid and ring on each canning jar and screw tightly to create a proper seal. Arrange the three canning jars in your slow cooker. Cover them completely with water, ensuring the water level is at least one inch above the tops of the jars. The orientation of the jars (laying on their side or standing upright) does not affect the outcome, so position them in whatever way best fits your slow cooker. Place the lid securely on the slow cooker and set it to the LOW temperature setting. Cook for approximately 8-9 hours, or until the dulce de leche inside the jars achieves a rich, deep golden-brown color and thick, caramel-like consistency. Once cooked, carefully remove the hot jars from the water using tongs or a jar lifter and allow them to cool completely to room temperature. If you desire, open the cooled jars and stir in 1/2 to 1 teaspoon of pure vanilla extract or vanilla paste into each jar for an added layer of flavor. Replace the lids and rings tightly and store the homemade dulce de leche in the refrigerator. It is said to keep well in the refrigerator for up to a month, though you’ll be lucky if it lasts that long!

Your versatile dulce de leche can be enjoyed in numerous ways. To warm it for drizzling, gently heat it on a low setting in the microwave or in a pan of water on the stovetop. This warmed caramel is exquisite drizzled over ice cream, used as a luscious dip for apples, or spread generously over freshly made crepes. We also absolutely love it served cold or at room temperature as a spread on fresh fruit like bananas and apples, or on sweet breads such as banana bread or zucchini bread. The culinary applications for this incredible homemade caramel are truly endless!
Important Notes for Perfect Dulce de Leche
Cooking Time Variability: Keep in mind that slow cookers can vary significantly in their actual operating temperatures and efficiency. Therefore, you may need to experiment slightly with the precise cooking time required to achieve your perfect dulce de leche. While mine reached perfection after exactly 8 1/2 hours, your batch might require anywhere from 8 to up to 10 hours to develop that ideal deep golden color and rich flavor. Always monitor toward the end of the suggested time.
