  • 2 cloves garlic, finely minced
  • 2 teaspoons grated fresh ginger (see note below)

Sauce:

  • ½ cup BBQ sauce (see note below)
  • ⅓ cup low-sodium soy sauce
  • 2 to 3 tablespoons pure maple syrup
  • ¼ cup chicken broth, veggie broth or water
  • Hot cooked rice or quinoa, for serving

Instructions

  1. In a large, nonstick skillet, heat the olive oil over medium-high heat until it’s hot and shimmering. Lightly season the chicken with salt and pepper. Add the chicken to the skillet in a single layer, allowing it to cook undisturbed for about 30 seconds to achieve a nice browning. Flip the chicken pieces and continue to stir until they are cooked through, which typically takes 4-5 minutes (or less if your chicken is cut into very thin strips or small cubes).
  2. Once cooked, remove the chicken from the skillet and transfer it to a plate. Leave any excess oil or juices in the skillet for the next step.
