A bold declaration, but this truly is my ultimate favorite cookie! Soft, wonderfully chewy, and packed with incredible flavor, these oatmeal chocolate chip coconut cookies are an absolute triumph.
Today is a day for making confident, undeniable statements, and I’m kicking it off with this: these are, without a shadow of a doubt, my favorite cookies of all time. This isn’t a claim I make lightly; my love for cookies runs deep, and I’ve sampled (and baked!) countless varieties over the years. Yet, these extraordinary treats consistently hold the top spot in my heart.

I first declared my unwavering adoration for this particular recipe a decade ago. And I am delighted (and yes, a little relieved!) to report that even after sharing countless other delightful cookie recipes on this site, my devotion to these soft and chewy oatmeal chocolate chip coconut cookies remains absolute. They are, unequivocally, my all-time favorites.
Of course, I have many other cookies that come *very* close to perfection. I’ve shared a plethora of fantastic cookie recipes, each with its own charm. But there’s something uniquely special about this recipe that elevates it to the pinnacle. I feel truly liberated making this declaration once more, ensuring that future generations are well aware of my preference. I envision a generous great-grandchild lovingly baking batches of these for me when I’m 87 and a half years old – though I’d happily accept them much sooner, of course!

A Universally Loved Cookie: Why This Recipe Stands Out
This cherished recipe was passed down to me by my wonderful Aunt Marilyn many years ago, and I’ve probably baked them well over 50 times since. My family and friends have fallen head over heels for them, and it seems many of you have too! Hearing your enthusiastic feedback always warms my heart. Here’s a glimpse of what some of you have shared over the years:
Alicia: “For the record, the cookies were AMAZING. As in, dangerous to keep around. Thanks for another winner!”
Kimberly: “My family’s favorite chocolate chip cookie recipe!!! These are amazing when the dough is frozen and then baked. They are puffy and chewy and delicious all at the same time!”
Yvette: “There are SO good. I made them last night and had a hard time not eating the whole bowl of just the dough! YUMMY– is not a strong enough word.”
It’s truly gratifying when I confidently recommend a recipe, or declare one a personal favorite, and then receive such incredible, unsolicited validation from fellow bakers. It confirms that the magic in these cookies isn’t just a personal obsession, but a shared delight!
The Secrets to Their Irresistible Charm: What Makes These Cookies Special
While I certainly appreciate a classic oatmeal chocolate chip cookie, this recipe elevates the experience through a few key innovations that make them truly exceptional. The first unique aspect, and one that cannot be overstated, is the preparation of the oats. Instead of simply stirring in whole rolled oats, we lightly blend them with the other dry ingredients. This subtle step is transformative. It ensures that the deliciously nutty flavor and a slight, yet never overpowering, texture of oatmeal are evenly distributed in *every single bite*. This thoughtful detail contributes immensely to the cookie’s cohesive chewiness and overall delightful mouthfeel, making me incredibly happy with every taste.

Beyond the blended oats, there are two other critical elements that truly set these cookies apart, taking them a step above the rest: 1) the combination of both light and dark brown sugar, and 2) the inclusion of coconut. I know, it might sound like a lot of “extras” or perhaps even a bit unconventional if you’re used to a more basic recipe. But trust me, you won’t achieve the title of “Mel’s Favorite Cookie On the Planet” by sticking to the same old recipe you’ve been using for years. To reach this level of cookie perfection, we need to be bold, try new things, and live life on the edge—at least in the kitchen!
What does “living life on the edge” mean in this context? It means embracing the power of two distinct brown sugars and the delicate tropical notes of coconut. And I promise you, it is absolutely worth it. The blend of light and dark brown sugars creates an unparalleled depth of flavor and an incredibly rich, moist, and chewy texture that simply cannot be replicated with just one type. While some have reported fantastic results using only light or only dark brown sugar, I personally stick to Aunt Marilyn’s original wisdom. I’m a firm believer that the rich molasses notes from the dark brown sugar, combined with the subtle sweetness of the light, create a symphony of flavor and chewiness that is truly unbeatable.

The Crucial Role of Coconut in These Chewy Wonders
Now, let’s address the elephant in the room for some: coconut. If you happen to be a “coconut hater” (or if you have an allergy, find the texture off-putting, or simply can’t find it at your local store), let’s talk options. First, if availability is the issue, perhaps it’s time to explore a new grocery store! However, if it’s a matter of preference or allergy, you *can* make adjustments. The crucial thing to remember is that coconut contributes not only flavor but also essential structure to these cookies. Simply omitting it entirely without a substitute will likely result in cookies that spread too much, turning into thin, lacy cookie pancakes rather than the soft, chewy delights we’re aiming for.
Some inventive bakers in the comments have suggested interesting alternatives, like swapping the coconut for toffee bits. This sounds absolutely delicious and would certainly add a different but equally delightful texture and flavor profile. You might also consider replacing the coconut with an equal amount of additional old-fashioned rolled oats. If you go this route, I recommend *not* blending these extra oats, allowing them to provide a more distinct chew. The key is to introduce another ingredient that offers similar bulk and textural integrity.
Please keep in mind that while experimenting with add-ins can lead to truly “amazeballs” cookies, they won’t quite be *my* specific, all-time favorite version. I genuinely hope you’ll try this original recipe at least once in your life. Experience the glorious combination of buttery goodness, the rich blend of brown sugars, the unique texture from blended oatmeal, and the indulgent burst of chocolate chips, all harmonized by the subtle magic of coconut. After you’ve savored the original, then by all means, unleash your creativity with variations and add-ins – and please, do report back with your delicious findings! I’m glad we had this chat.

If you’re someone whose heart beats for soft and chewy chocolate chip cookies, I am confident you are going to fall head over heels for these. I don’t expect everyone to share my exact level of unfailing adoration (you can leave the mild obsessiveness to me – I’m quite dependable in that regard!), but these cookies have garnered a significant fan following for very good reason. They are quick to prepare, surprisingly easy to bake, and consistently deliver a delicious, comforting experience every single time.

FAQs for Soft and Chewy Oatmeal Chocolate Chip Coconut Cookies
When stored in an airtight container, these delicious cookies will remain fresh and chewy for about 1-2 days at room temperature.
You can easily bake these cookies from frozen dough! Simply place the frozen cookie dough balls on a parchment-lined baking sheet and bake them at the same temperature (350°F / 175°C), but add a few extra minutes to the baking time, typically 12-15 minutes, or until the edges are golden.
For the best soft and chewy texture, I’ve found that old-fashioned rolled oats work best in this recipe. If you opt to use quick oats, be very careful not to over-measure them, as they absorb liquid differently. Over-measuring quick oats can lead to dry cookies that may not flatten correctly during baking.
If you need to omit the coconut, it’s important to substitute it with another ingredient to maintain the cookie’s structure and prevent them from spreading too flat. You could add a few more oats (unblended this time) or consider adding toffee bits or another textural component in its place (refer to my detailed notes above for more suggestions).

Ingredients
- 1 cup (100 g) old-fashioned rolled oats
- 2 ¼ cups (320 g) all-purpose flour, I use unbleached all-purpose flour
- 1 teaspoon baking soda
- ¾ teaspoon salt
- 1 cup (227 g) salted butter, softened
- 1 ¼ cups (265 g) packed light brown sugar
- ½ cup (106 g) packed dark brown sugar
- 2 large eggs
- 1 tablespoon vanilla extract
- 1 cup (85 g) sweetened or unsweetened coconut flakes
- 2 cups (340 g) semisweet or bittersweet chocolate chips
Instructions
-
Preheat oven to 350 degrees F (175°C). In a food processor or blender, combine the old-fashioned rolled oats, all-purpose flour, baking soda, and salt. Process for approximately 30 seconds until the oats are coarsely blended into the flour mixture. Set this dry mixture aside.
-
In the bowl of a stand mixer fitted with the paddle attachment (or using a large bowl and a handheld electric mixer), add the softened salted butter along with both the packed light brown sugar and packed dark brown sugar. Beat these ingredients together for 1-2 minutes until the mixture is light in color and fluffy. Next, add the large eggs and vanilla extract, and continue to mix for another 1-2 minutes, scraping down the sides of the bowl as needed, until the mixture is light and well combined.
-
Gradually add the blended dry ingredients to the wet mixture. Mix on low speed just until combined, stirring only once or twice; it’s okay if not all the flour is fully incorporated at this stage. Then, fold in the sweetened or unsweetened coconut flakes and the semisweet or bittersweet chocolate chips. Continue mixing until no dry streaks of flour remain and all the ingredients are evenly distributed. Be careful not to overmix the dough.
-
Using a #40 cookie scoop (or a tablespoon), shape the cookie dough into uniform balls. Place these dough balls several inches apart on baking sheets lined with parchment paper. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden and the centers still look soft. Allow the cookies to cool slightly on the baking sheets before carefully transferring them to a wire rack to cool completely.
