  • 12 slices bacon, chopped into bite-sized pieces
  • 1 medium onion, finely chopped for even cooking and flavor distribution
  • 2 garlic cloves, finely minced to release their aromatic oils
  • Salt and freshly ground black pepper, to taste
  • 1 pound radiatore pasta, or any other small, shape-holding pasta like farfalle or rotini
  • 1 pint cherry tomatoes, halved for easy eating and optimal juice release
  • 1 (6-ounce) bag baby spinach, fresh and thoroughly washed
  • 1 cup grated Parmesan cheese, plus extra for serving

Instructions 

  1. Bring 4 quarts of generously salted water to a rolling boil in a large pot. While the water heats, melt the butter in a large nonstick skillet over medium heat. Add the cubed bread and cook, stirring frequently to ensure even browning, until the croutons are golden brown and crispy, typically 6 to 8 minutes. Transfer the finished croutons to a separate bowl and wipe out the skillet.
  2. In the same skillet, cook the chopped bacon over medium-high heat until it reaches a desired crispness, about 5 minutes. Using a slotted spoon, transfer the crispy bacon pieces to a paper towel-lined plate to drain excess fat. Leave approximately 2 teaspoons of the rendered bacon fat in the skillet. Add the finely chopped onion to the skillet with the bacon fat and cook until softened and translucent, about 5 minutes. Stir in the minced garlic and 1/2 teaspoon of black pepper, cooking until fragrant, which should take approximately 30 seconds.
  3. While the onion mixture is cooking, add 1 tablespoon of salt to the boiling water, then stir in the pasta. Cook according to package directions until it is just tender (al dente). Before draining the pasta, reserve 1 1/2 cups of the starchy pasta water by ladling it into a bowl. Drain the cooked pasta and return it to the large pot. To the pot, add the halved cherry tomatoes, fresh baby spinach, grated Parmesan cheese, the crispy bacon, and the sautéed onion and garlic mixture. Pour in 1 cup of the reserved pasta water. Stir quickly and thoroughly to ensure all ingredients are well combined and the cheese melts smoothly without clumping. Add additional reserved pasta water, a tablespoon at a time, if the pasta seems too dry or needs more sauce consistency. Season with additional salt and pepper to taste. Ladle the BLT pasta generously onto individual plates or into bowls and immediately top with the homemade crispy croutons.
