These extra fudgy brownies are the brownies dreams are made of! So easy (only one bowl!), you’re only minutes away from brownie perfection.
In a world overflowing with dessert recipes, one might wonder if another brownie recipe is truly necessary. We say, unequivocally, yes! Especially when that recipe promises unparalleled fudginess, a tantalizing crackly top, and the sheer simplicity of a one-bowl method. Forget complicated baking projects; these brownies deliver maximum indulgence with minimal effort, making them an essential addition to your baking repertoire.

Why These Fudgy Brownies Stand Out
As passionate bakers, we understand the allure of a truly exceptional brownie. While our archives are rich with various brownie recipes, the bar for introducing a new one is set incredibly high. For a recipe to earn a coveted spot, it must meet stringent criteria:
- **Effortless Preparation:** It needs to be incredibly easy, ideally a one-bowl wonder to minimize cleanup.
- **Unforgettable Flavor:** The taste must be so good it evokes pure joy, delivering an intensely chocolatey experience.
- **Unique Texture:** It must offer something distinctly different, elevating it beyond existing favorites.
And happily, these super rich and incredibly fudgy brownies not only meet but exceed every single one of these demands! Every bite is a testament to their luxurious texture and deep chocolate flavor, promising a truly happy day for any dessert lover.

The One-Bowl Advantage: Simplicity Meets Deliciousness
The beauty of these brownies begins with their preparation: everything comes together effortlessly in a single bowl. This method isn’t just a convenience; it’s a game-changer, especially for busy individuals or those new to baking. While some of our other cherished recipes, like our chocolate peanut butter brownies and deep dark chocolate brownies, also embrace the one-bowl approach, these new fudgy brownies offer a distinct edge that truly sets them apart.
Beyond Delicious: The Secret to Unrivaled Fudginess
What truly elevates these brownies from merely “tasty” to “amazingly delicious” is their unparalleled fudginess. This isn’t just a claim; it’s a promise backed by carefully selected ingredients and precise ratios. The texture is nothing short of unreal – dense, moist, and chewy in the best possible way. These are unequivocally among the fudgiest brownies in our entire collection, a fact enthusiastically confirmed by our resident fudge and ultra-fudgy brownie connoisseur, Brian, who now ranks them as his all-time favorites. The combination of both melted chocolate and cocoa powder forms the robust base, ensuring a profound chocolate flavor that permeates every bite. Furthermore, the inclusion of melted butter, a touch of oil, and extra egg yolks is key to achieving that signature dense, moist, and incredibly fudgy interior. This unique blend of fats and binders results in a brownie that truly melts in your mouth.

The Irresistible Crackly Top: A Mark of Perfection
Beyond the incredible fudginess, these brownies boast another highly sought-after characteristic: that gorgeous, crackly top. This delicate, thin crust isn’t just visually appealing; it’s the hallmark of a truly well-made brownie, often reminiscent of beloved boxed brownie mixes. For those who appreciate the nostalgia and texture of a boxed brownie but desire a superior homemade flavor, this recipe delivers. My husband, Brian, a long-time admirer of that crackly top found in boxed brownies, had often expressed missing this feature in many homemade versions. This recipe definitively ends that mourning period! These extra fudgy brownies not only bring back that delightful crackle but also offer a taste and texture that far surpasses anything from a box.
While our ancient fudgy brownie recipe from the archives has served as a fantastic homemade alternative to boxed brownies for years, filling many hearts (and stomachs), we are boldly declaring that *this* particular recipe is even better. The secret lies in the masterful combination of both melted unsweetened chocolate and rich cocoa powder. This dual-chocolate approach guarantees maximum chocolate flavor depth and an unparalleled fudgy texture. The texture is further enhanced by the strategic use of melted butter and a little oil, which contribute to moisture and richness, and crucially, additional egg yolks. Egg yolks are rich in fat and emulsifiers, providing a decadent creaminess and chewiness that whole eggs cannot achieve on their own.

Your Daily Dose of Decadence
To put it simply, these brownies are destined for greatness. They deserve a prominent place in your recipe collection and, quite possibly, a regular spot in your daily routine. We’ve found it nearly impossible to stop making them – it’s a delicious problem! If you’re yearning for a seriously fudgy brownie, complete with a beautiful crackly top, that comes together in mere minutes, then your search ends today. Prepare to indulge in a treat that redefines homemade perfection.
Essential Baking Tips for Perfect Fudgy Brownies
Achieving brownie perfection requires attention to a few key details. Here are some insights to help you get the best results from this recipe:
- Chocolate Quality: The type of chocolate you use profoundly impacts the final flavor. For the unsweetened chocolate and chocolate chips, we highly recommend premium brands like Ghirardelli or Guittard. Their quality ensures a deep, rich chocolate taste. If unsweetened chocolate isn’t available, you could experiment with bittersweet or semisweet chocolate, though you might need to slightly reduce the granulated sugar. For an even more intense chocolate flavor, feel free to increase the unsweetened chocolate from 2 ounces to 3 ounces – a delightful tweak for serious chocoholics.
- The Power of Egg Yolks: We know the temptation might be strong to simply use three whole large eggs instead of two large eggs plus two additional egg yolks. However, we strongly advise against this. Our testing revealed that using three whole eggs yields a different, less fudgy texture. Egg yolks are crucial here; they contribute significant moisture and richness, resulting in that dense, chewy, and ultra-fudgy consistency. Egg whites, while providing structure, can sometimes lead to a drier, more cake-like brownie, which is not what we’re aiming for. Stick with the specified egg ratio for the ultimate fudgy effect.
- Cocoa Powder Choice: Both Dutch-process and natural unsweetened cocoa powder work wonderfully in this recipe. Dutch-process cocoa offers a darker color and a milder, slightly sweeter chocolate flavor. Natural unsweetened cocoa, which we often use for convenience and cost-effectiveness, provides a more intense, classic chocolate taste. Choose whichever you prefer or have on hand; both will contribute to a delicious brownie.
- Cooling and Storage: For the cleanest cuts and the absolute best texture, allow the brownies to cool completely in the pan. Chilling them further (if desired) makes cutting even easier and, in our opinion, transforms them into an even more divine treat. However, a crucial warning: whatever you do, DO NOT refrigerate or freeze these brownies if you value your self-control. They become incredibly dangerous when chilled, intensifying their rich, fudgy appeal to an irresistible degree. Store them at room temperature in an airtight container for up to 3-4 days for optimal enjoyment, unless you prefer them dangerously delightful from the fridge!
Serving Suggestions and Delicious Variations
These extra fudgy brownies are phenomenal on their own, but they also serve as a perfect base for numerous delicious additions. Consider stirring in a cup of chopped walnuts or pecans with the chocolate chips for a delightful textural contrast. A pinch of flaky sea salt sprinkled over the top before baking can enhance the chocolate flavor and add a sophisticated touch. For those who love a hint of coffee with their chocolate, a teaspoon of instant espresso powder dissolved in the boiling water will deepen the chocolate notes without adding a coffee flavor. You could also experiment with different types of chocolate chips, like milk chocolate or white chocolate chunks, for varying levels of sweetness and flavor profiles. Serve them warm with a scoop of vanilla bean ice cream or a dollop of fresh whipped cream for an ultimate dessert experience.
These brownies are more than just a dessert; they are an experience. They embody ease, decadence, and pure joy in every bite. So, clear your counter, grab that one bowl, and prepare to bake the best fudgy brownies you’ve ever tasted. You won’t regret it!

Extra Fudgy One Bowl Brownies
Ingredients
- ½ cup boiling water
- 2 ounces (57 g) unsweetened chocolate, finely chopped
- ⅓ cup (28 g) unsweetened or Dutch-process cocoa powder (see note)
- 2 ⅓ cups (495 g) granulated sugar
- ½ cup vegetable, canola, or avocado oil (could also try melted coconut oil)
- 4 tablespoons (57 g) salted butter, melted
- 2 large eggs + 2 large egg yolks
- 2 teaspoons vanilla extract
- 1 ¾ cups (249 g) all-purpose flour
- ½ teaspoon salt
- 1 cup (170 g) semisweet or bittersweet chocolate chips
Instructions
-
Preheat oven to 350 degrees F. Line a 9X13-inch metal pan with aluminum foil and lightly grease with cooking spray (the lining of the pan is optional but helps with cleanup or pulling out the whole slab of brownies).
-
In a large bowl, whisk together the boiling water and chopped chocolate until smooth (if the chocolate doesn’t melt fully, microwave the water/chocolate mixture for 20-30 seconds). Add the cocoa powder and whisk together.
-
Add the sugar, oil, butter, eggs and vanilla. Mix until smooth and well-combined.
-
Add the flour and salt and mix until just combined and no white streaks remain. Stir in the chocolate chips (don’t overmix, just fold them in until evenly distributed).
-
Spread the batter evenly in the prepared pan. Bake for 25-30 minutes until crackly on top and set around the sides. Cool completely (and chill, if desired – makes cutting easier and chilled brownies are just straight up divine).
Notes
Eggs: I know some of you are going to be tempted to throw in three large eggs instead of using the 2 large eggs + 2 egg yolks. Just to let you know, I DID try the three egg variation, and the texture of the brownies wasn’t the same, so I highly recommend following the recipe for the full fudgy effect. If it helps, egg yolks contribute to moisture in baking while egg whites help with structure (but can sometimes dry out baked goods).
Cocoa Powder: I have made these brownies with both Dutch-process and natural, unsweetened cocoa powder. Both work great. The Dutch-process lends a richer, milder, darker, and slightly sweeter flavor. Most often I use natural, unsweetened because I always have it on hand and it’s usually cheaper (which is important when you make these brownies as much as we do!).
