  • Squeeze of fresh lemon juice
  • Extra virgin olive oil, for drizzling

For the Marinated Chicken:

  • 4 cloves garlic, smashed or minced
  • Juice of 1 fresh lemon
  • 2 teaspoons red wine vinegar
  • 2 tablespoons extra virgin olive oil
  • 2 heaping tablespoons plain yogurt
  • 1 tablespoon dried oregano
  • Salt and freshly ground black pepper, to taste
  • 1 ¼ pounds boneless skinless chicken breasts, cubed into 1-inch pieces

To Assemble Your Gyros:

  • Soft wrap bread, or high-quality pita bread, warmed
  • Fresh tomatoes, seeded and diced
  • Red onion, sliced thin
  • Optional: Shredded lettuce, crumbled feta cheese

Instructions 

  • Prepare the Tzatziki Sauce: If using regular plain yogurt, line a fine-mesh sieve with cheesecloth and place it over a bowl. Pour the yogurt into the cheesecloth and let it strain in the refrigerator for several hours or overnight to remove as much whey as possible. This step will result in a much thicker and creamier tzatziki. (If you’re using thick Greek yogurt like Oikos or Fage, this straining step is not necessary.)
  • Shred the cucumber (peeled and seeded as per ingredients list). Wrap the shredded cucumber in a clean kitchen towel or paper towels and squeeze firmly to remove as much excess water as possible. In a medium bowl, combine the strained yogurt, shredded cucumber, pressed garlic, red wine vinegar, salt and pepper to taste, and a squeeze of fresh lemon juice. Mix well until all ingredients are thoroughly combined. Drizzle lightly with extra virgin olive oil. Refrigerate for at least 30 minutes before serving to allow the flavors to fully meld.
  • Marinate the Chicken: In another medium bowl, combine the smashed garlic, lemon juice, red wine vinegar, olive oil, plain yogurt, dried oregano, and salt and pepper to taste. Whisk these ingredients together until thoroughly mixed. Add the cubed chicken pieces to the bowl and toss well, ensuring each piece is evenly coated with the marinade. Cover the bowl and refrigerate for about 1 hour. For a more intense flavor, you can marinate the chicken for up to 4 hours.
  • Cook the Chicken: Heat a large skillet over medium-high heat with a little olive oil. Add the marinated chicken pieces in a single layer, making sure not to overcrowd the pan. Cook for 6-8 minutes, turning occasionally, until the chicken is cooked through and lightly browned on all sides. (Alternatively, you can broil the chicken on a baking sheet for 8-10 minutes, flipping halfway, or grill over medium-high heat until cooked.) Once the chicken is completely cooked through, transfer it to a plate and let it rest for 5 minutes before assembling the gyros.

Lay out a warm wrap, spread a generous amount of the prepared tzatziki sauce, layer with the cooked chicken, and top with diced tomatoes and thinly sliced red onions.
