Streusel:

  • ¼ cup (36 g) all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 tablespoon packed brown sugar
  • ¼ teaspoon ground cinnamon
  • 2 tablespoons butter, softened
  • ¼ cup (30-40 g) finely chopped pecans

Instructions

  1. Preheat oven to 350 degrees F (175°C). Lightly grease three mini loaf pans (approximately 5.75×3-inches). Set aside.

  • Consider your bread pan type: Dark-coated pans tend to absorb more heat. If using a dark pan, reduce your oven temperature by 25 degrees F (14°C) and extend the baking time as necessary to prevent over-browning on the outside while the inside remains underbaked.
  • Ensure thorough baking: Underbaking is a common cause of sinking. Always bake until the top springs back gently when touched and a toothpick inserted into the center comes out clean or with only moist crumbs, not wet batter.
  • Avoid opening the oven door: Resist the urge to open the oven door during the main baking period. Fluctuations in temperature can cause the loaves to sink, especially in the crucial early stages of rising.
