The Secret is in the Sauce: A Quick and Simple Asian-Inspired Brown Sauce

Every great stir-fry and Chinese-inspired dish hinges on a stellar sauce, and this recipe is no exception. We begin with a luscious, quick-to-prepare Asian brown sauce that brings all the elements of sweet, savory, and umami together in perfect harmony. These core ingredients simmer gently for just a few minutes, transforming into a rich, slightly thickened glaze:

  • Chicken broth (preferably low-sodium)
  • Brown sugar (for depth and sweetness)
  • Soy sauce (low-sodium is recommended for better control over saltiness)
  • Fresh ginger and garlic (the aromatic heart of the sauce)
  • Oyster sauce (the flavor secret weapon)
  • Cornstarch (for thickening)
  • Sesame oil (for a nutty finish)

If the mention of oyster sauce gives you pause, rest assured! This versatile condiment is a staple in Asian cuisine and is readily available in the Asian foods aisle of most major grocery stores. Far from tasting overtly fishy, oyster sauce adds a remarkably concentrated, savory depth and a unique umami richness that can’t be replicated. It’s dark, syrupy, perfectly balanced between salty and mildly sweet, and contributes an incredible layer of flavor that elevates this dish from good to extraordinary.

And here’s a bonus: once you have a bottle of oyster sauce in your pantry, you’ll find countless other uses for it. It’s fantastic in stir-fries, marinades, and dipping sauces. This recipe alone, however, is compelling enough reason to stock up on this pantry essential. For those who truly wish to substitute, hoisin sauce can be used, but be aware that it will impart a slightly different, sweeter flavor profile to the overall dish.

The Perfect Pairing: Tender Chicken and Crisp Broccoli

Once your exquisite brown sauce has achieved its glossy, thickened perfection, it’s time to introduce the stars of the show: the succulent chicken and vibrant broccoli. The beauty of this recipe lies in its adaptability, allowing you to choose the chicken preparation method that best suits your time and preferences.

For unparalleled speed and convenience, I almost exclusively opt for the meat from a pre-cooked rotisserie chicken. This simple hack shaves significant time off your cooking process, making dinner truly achievable in under 30 minutes. Simply shred or chop the chicken into bite-sized pieces, and you’re halfway there. Alternatively, if you prefer to cook your own, feel free to use chicken breasts or thighs. You can cook and shred or chop them beforehand, or follow the recipe notes for a seamless integration of uncooked chicken, which involves quickly searing it in the pan before the sauce preparation.

When it comes to the broccoli, I’ve experimented with various methods, and I consistently find that adding it raw directly to the pan with the chicken doesn’t yield the desired tender-crisp texture. To ensure perfect results every time, I highly recommend lightly steaming the broccoli florets beforehand. A quick steam in the microwave is my go-to, preserving their vibrant color and delicate crunch without overcooking them. This brief pre-cooking step ensures the broccoli integrates beautifully with the sauce and chicken, maintaining its ideal texture.

Mastering This Recipe in Four Simple Steps:

  1. Effortlessly steam your broccoli (the microwave is your best friend here!).
  2. Simmer the irresistible Asian-inspired brown sauce until perfectly thickened.
  3. Stir in the cooked chicken and steamed broccoli, coating them generously.
  4. Serve immediately and dive into a world of flavor!

Saucy, Saucy, Saucy: The Perfect Balance for Every Palate

As a family that wholeheartedly adores a good sauce, this recipe is intentionally crafted to be generously saucy. This abundance of savory, sweet, and umami-rich liquid makes it absolutely perfect for spooning over a bed of fluffy rice, allowing every grain to soak up the incredible flavors. It also pairs wonderfully with warm flatbread or naan bread, which are ideal for scooping up every last drop of that delicious sauce.

The delightful interplay of textures – tender chicken, crisp-tender broccoli, and the silken sauce – creates a truly satisfying meal. While we revel in its sauciness, we understand that preferences vary. If you lean towards a slightly less saucy dish, simply reduce the amount of broth to about 2 cups. This minor adjustment will still deliver incredible flavor with a more concentrated sauce.

I genuinely hope this recipe finds a permanent home in your weeknight dinner rotation, just as it has in ours. It’s become a go-to for those busy evenings, often sparking my frequent trips to Costco to grab another rotisserie chicken!

Ingredients

  • 2 ½ cups chicken broth or stock (low-sodium recommended)
  • ⅓ cup light or dark brown sugar
  • ½ cup soy sauce (low-sodium recommended)
  • ¼ cup oyster sauce (see notes)
  • 3 tablespoons cornstarch
  • 1 tablespoon grated fresh ginger or refrigerated ginger paste (see notes)
  • 1 tablespoon finely minced garlic (or 1 teaspoon garlic powder)
  • 1 teaspoon sesame oil
  • 3-4 cups cooked, shredded or cubed chicken (about 20 ounces), such as from a rotisserie chicken
  • 6-8 cups broccoli florets, chopped into bite-size pieces (about 16 ounces)
  • Hot, cooked rice, for serving
  • Toasted sesame seeds and chopped green onions, for garnish (optional)

Instructions

  1. Place the broccoli florets in a microwave-safe bowl with 1 cup of water. Cover the bowl and steam in the microwave for 3-4 minutes, or until the broccoli is crisp-tender. Alternatively, you can steam the broccoli on the stovetop. Once cooked, drain the water and set the broccoli aside.

  2. In a deep 12-inch skillet (or a large saucepan/pot), combine the broth, brown sugar, soy sauce, oyster sauce, cornstarch, ginger, garlic, and sesame oil. Whisk all ingredients thoroughly until well combined and the cornstarch is dissolved.

  3. Bring the mixture to a gentle simmer over medium heat, whisking constantly. Continue to cook for 3-4 minutes, or until the sauce has thickened to your desired consistency.

  4. Add the cooked chicken and steamed broccoli to the skillet with the thickened sauce. Stir gently to ensure all the chicken and broccoli pieces are thoroughly coated in the delicious sauce. Heat the mixture through for 1-2 minutes until everything is warm.

  5. Serve the Chinese chicken and broccoli immediately over hot, cooked rice. Garnish with toasted sesame seeds and chopped green onions, if desired, for an extra touch of flavor and presentation.

Notes

Oyster Sauce: We highly recommend using oyster sauce in this recipe for its unique, savory umami flavor. If you’re new to it, don’t be deterred; it surprisingly doesn’t taste overly fishy. It’s a dark, syrupy, salty, and mildly sweet sauce commonly found in the Asian food aisle. For a substitute, hoisin sauce can be used, but note that the dish’s flavor will be sweeter and slightly different.

Salt Content: If you use both full-sodium broth and soy sauce, the dish might be quite salty. We recommend using low-sodium varieties for both to better control the overall saltiness, as this recipe has been developed with low-sodium ingredients.

Ginger: For the best flavor, fresh ginger is preferred. If fresh ginger is unavailable or you find it inconvenient, ginger paste (often found in the refrigerated produce section) is an excellent substitute. We do not recommend dried ginger for this recipe. A great tip for fresh ginger is to buy a piece, cut it into 1-2 inch segments, and store it in the freezer. When needed, grate it from frozen (no need to peel!) using a microplane or fine grater.

Chicken Options: While cooked chicken (like rotisserie chicken) is a huge time-saver, you can easily use uncooked chicken. Cut boneless, skinless chicken breasts or thighs into bite-sized pieces. Season with salt and pepper, then cook them in a bit of olive oil in your skillet until fully cooked through, before adding the sauce ingredients. Remove the cooked chicken to a plate, prepare the sauce, and then return the chicken to the pan along with the broccoli.

Sauce Volume: This recipe is designed to be generously saucy, which is perfect for serving over rice or with flatbread. If you prefer a less saucy dish, reduce the chicken broth to approximately 2 cups.
