The textures and flavors are truly out of this world, making every bite an unforgettable journey. Despite its seemingly complex composition, all the components work together seamlessly, creating a masterpiece that feels meticulously designed rather than a happy accident. This pie is a testament to how well complementary ingredients can elevate a simple dessert to gourmet status.

The Secret to a Perfect Make-Ahead Pie
One of the common challenges with traditional banana cream pies is their limited shelf life; the bananas tend to brown quickly, even with a squeeze of lemon juice, which can sometimes alter the pie’s delicate flavor profile. However, this Black Bottom Banana Coconut Cream Pie offers a fantastic solution for those who love to plan ahead or reduce last-minute stress. By preparing the individual components in advance, you can enjoy a freshly assembled pie without the rush.
Almost every element of this magnificent dessert can be prepped days before you plan to serve it. This strategy not only saves time but also allows the flavors to meld beautifully, enhancing the overall taste. Here’s how to get a head start:
- **Coconut Graham Cracker Crust:** Prepare and bake the crust as directed. Once completely cooled, cover it tightly with plastic wrap and refrigerate. This ensures a firm, delicious foundation ready for assembly.
- **Chocolate Ganache:** Make the ganache and allow it to cool, then cover and refrigerate. When it’s time to assemble, a quick, gentle warming (perhaps a few seconds in the microwave or over a warm water bath) will bring it back to a spreadable consistency.
- **Homemade Pudding:** Cook the pudding according to the recipe. To prevent a skin from forming and keep it perfectly smooth, press plastic wrap directly onto the surface of the pudding before refrigerating. Before using, give it a good stir to restore its creamy texture.
- **Toasted Coconut:** Toast the shredded coconut and store it in an airtight container or bag at room temperature. This will keep it delightfully crunchy and aromatic until you’re ready to sprinkle it on top.
The only two elements best prepared just before assembly are the sliced bananas and the whipped cream. This ensures the bananas remain fresh and vibrant, and the whipped cream is light and airy, providing the perfect finishing touch to your spectacular pie.

The Creamy Heart: Homemade Pudding Filling
The soul of any cream pie lies in its filling, and this Black Bottom Banana Coconut Cream Pie boasts a homemade pudding that is nothing short of extraordinary. This filling is a variation of a beloved coconut cream pie recipe that has garnered rave reviews for years, ensuring a tried-and-true foundation for our decadent creation. The difference between a store-bought pudding and this homemade version is simply incomparable; the depth of flavor and the silken texture you achieve from scratch elevate the entire pie.
Crafting this pudding is a straightforward yet rewarding process. All the pudding ingredients – including luscious coconut milk, rich heavy cream (or half-and-half), vibrant egg yolks, granulated sugar, cornstarch for thickening, and a pinch of salt to balance the sweetness – are whisked together in a medium saucepan. The mixture is then gently brought to a simmer over medium heat, requiring constant whisking or stirring to prevent lumps and ensure even cooking. Within minutes, you’ll observe the magical transformation as the pudding thickens, with large bubbles gently popping on the surface, indicating it’s perfectly cooked.
Immediately after removing it from the heat, butter, vanilla extract, and a touch of coconut extract are stirred in. These additions melt seamlessly, infusing the pudding with luxurious richness and enhancing its aromatic profile. A valuable tip: if, by chance, your pudding appears to separate or look slightly curdled at this stage, don’t despair! A vigorous whisking for a minute or two will miraculously bring it back to a smooth, cohesive consistency. For those who, like me, appreciate an ultra-smooth, lump-free pudding, I highly recommend straining the mixture through a fine mesh strainer. This optional step guarantees a velvety texture that melts in your mouth, making every spoonful a pure delight.

The Foundation of Flavor: A Special Crust
Any seasoned baker will tell you: a pie is only as good as its crust. While a standard graham cracker crust serves its purpose, this extraordinary Black Bottom Banana Coconut Cream Pie demands a foundation of equal magnificence. Enter the *buttery coconut graham cracker crust*—a truly special base that elevates this dessert from delightful to divine. It’s no surprise that such an amazing, multi-layered pie begins with a crust that is itself a marvel of flavor and texture.
This isn’t just any crust; it’s a meticulously crafted blend of finely crushed graham crackers, perfectly toasted shredded coconut, a hint of brown sugar for depth, and generous salted butter that binds it all together. The toasting of the coconut before incorporating it into the crust is a crucial step, intensifying its natural sweetness and nuttiness, adding an extra layer of tropical aroma that hints at the delights to come. As it bakes, your kitchen will be filled with a warm, inviting fragrance, a prelude to the deliciousness that awaits.
Once baked to a light golden perfection and allowed to cool completely, this incredible crust receives its luxurious “black bottom.” A rich, glossy chocolate ganache is generously spread over its surface, creating a decadent, slightly firm, yet still yielding layer that is utterly irresistible. This chocolate layer is not just for indulgence; it also acts as a barrier, helping to keep the crust crisp and providing a delightful contrast to the creamy fillings above. For me, this combination of a buttery, coconut-infused crust and a rich chocolate ganache is the fulfillment of all my dessert dreams.

Assembling This Masterpiece is Easy as Pie
After preparing each exquisite component, assembling the Black Bottom Banana Coconut Cream Pie is a joyful and straightforward process. Each layer builds upon the last, creating a visually stunning and incredibly delicious dessert. The magic happens as follows:
- **The Foundation: Buttery Coconut Graham Cracker Crust** – This is where it all begins, a flavorful and robust base.
- **The Decadent Layer: Silky Chocolate Ganache** – Spread evenly over the cooled crust, it provides a rich, dark counterpoint.
- **The First Fruity Layer: Sliced Bananas** – Neatly arranged, these fresh banana slices add natural sweetness and a crucial textural element.
- **The Creamy Core: Homemade Pudding** – Half of the rich, smooth pudding is spread over the bananas, ensuring they are fully covered to prevent browning.
- **More Bananas!** – Another layer of fresh banana slices is added, doubling down on that classic banana flavor.
- **The Second Creamy Layer: Remaining Pudding** – The rest of the pudding is spread to the edges, encasing the bananas and creating a beautiful, rounded dome.
- **The Cloud-Like Topping: Fresh Whipped Cream** – Lightly sweetened and airy, it’s the perfect crown for this regal pie.
- **The Final Flourish: Toasted Coconut** – Sprinkled generously, it adds texture, aroma, and that irresistible tropical note.
The bananas play a vital role in this pie, going beyond just adding flavor. Their natural sweetness and slight tartness expertly cut through the richness of the chocolate ganache and the creamy pudding, creating a balanced flavor profile that prevents the pie from being overly sweet. Without the fresh, vibrant taste of bananas, this pie wouldn’t achieve its perfect equilibrium. Thank you, bananas, for your indispensable contribution, not just to beloved treats like banana bread but especially for your critical role in this extraordinary pie. No other fruit could accomplish what you do here.

Even after chilling, the chocolate ganache layer remains wonderfully soft and easily sliceable, ensuring that each piece of pie comes out perfectly. The rich, deep chocolate undertones, combined with the fresh, sweet bananas, the velvety homemade pudding, and the delightful crunch and aroma of toasted coconut, create an unbelievably delicious symphony of tastes and textures. This pie is a true crowd-pleaser; my family absolutely adores it. My husband, Brian, a self-proclaimed superfan of both banana cream pie and coconut cream pie, has emphatically declared this his all-time favorite pie.
Frankly, I’m a little disappointed it took me this long to combine bananas with my cherished coconut cream pie recipe, incorporate chocolate into my banana cream pie, and add coconut directly into the pie crust! This Black Bottom Banana Coconut Cream Pie is nothing short of magical, a true showstopper for any occasion. Don’t just dream about it – make it! Your taste buds will thank you.

Ingredients
Coconut Graham Cracker Crust:
- 1 ½ cups (150 g) graham cracker crumbs, about 11 rectangle graham crackers
- ½ cup (43 g) toasted shredded coconut (see note)
- 1 tablespoon brown sugar
- ½ cup (113 g) salted butter, melted
Chocolate Ganache:
- ½ cup (85 g) semisweet or bittersweet chocolate chips
- ½ cup heavy cream
Pudding Filling:
- 1 (13-ounce) can coconut milk
- 1 ½ cups heavy cream or half and half
- 3 large egg yolks
- ¾ cup (159 g) granulated sugar
- ⅓ cup cornstarch
- Pinch salt
- 2 tablespoons butter
- 1 teaspoon vanilla extract
- 1 teaspoon coconut extract
- 2-3 medium bananas, peeled and sliced 1/4-inch thick
Topping:
- 1 cup heavy whipping cream
- ¼ cup (29 g) powdered sugar
- ¼ teaspoon vanilla extract
- ½ cup (43 g) toasted shredded coconut (see note)
Instructions
-
For the crust, preheat the oven to 350 degrees F. Combine all the crust ingredients together until evenly moistened. Press into the bottom and sides of a 9-inch pie plate. Bake for 8-9 minutes until very lightly golden. Remove from the oven and let cool completely.
-
For the ganache, heat the cream to a simmer in the microwave or on the stovetop. Add the chocolate chips. Let sit for 3-5 minutes until the chocolate chips are melted. Stir until glossy and smooth. Spread evenly over the bottom of the cooled crust. Refrigerate until ready to assemble the rest of the pie.
-
For the pudding, in a medium saucepan, add the coconut milk, cream (or half and half), egg yolks, sugar, cornstarch and salt and whisk to combine. Bring the mixture to a simmer over medium heat, whisking or stirring constantly. Cook until large bubbles pop at the surface the mixture has thickened.
-
Immediately remove from the heat and stir in the butter, vanilla and coconut extracts.
Note: if the pudding separates or looks curdled at this point, whisk it vigorously for a minute or two until it comes back together (it will; I promise).
Strain through a fine mesh strainer (optional, but helps get rid of small lumps). Press plastic wrap directly on the surface of the pudding and refrigerate until no longer warm, 1-2 hours.
-
To assemble, place banana slices in a single layer over the ganache. Spread half of the pudding over the bananas, spreading all the way to the edges to cover the bananas completely (so they don’t brown). Top the pudding with another layer of sliced bananas and then spread the remaining pudding over the top, spreading all the way to the edges.
-
Refrigerate the pie until chilled, 1-2 hours.
-
For the topping, whip the cream, powdered sugar and vanilla together until thick and creamy (I use my blender; you can use an electric handheld or stand mixer). Spread whipped cream over pie and top with toasted coconut. At this point, the pie can be served immediately or refrigerated for another 1-2 hours (much longer and the whipped cream may get a little weepy and put off liquid).
Notes
Crust: if using sweetened, shredded coconut, you can leave out the brown sugar for a less sweet crust. The balance of sweetness is key, so adjust to your preference.
Coconut Milk: use the coconut milk that comes in a can, not in cartons found in the refrigerated section. Canned coconut milk, especially full-fat, offers a richer flavor and creamier texture essential for this pudding. While light coconut milk can be used, the coconut flavor seems to be more prominent in full-fat versions, contributing to a more luxurious pie.
Make-Ahead Tips: All of the components – the crust, ganache, pudding, and toasted coconut – can be made several days ahead of time and refrigerated separately. Because bananas tend to brown if assembled more than 12-18 hours in advance, assemble the pie closer to serving time if possible. If the ganache hardens significantly in the refrigerator, lightly warm it in the microwave for a few seconds until it’s just spreadable again. The make-ahead approach dramatically simplifies the serving day process, making this elegant pie more accessible for special occasions or busy weeks.
