The Unsung Hero: Simple Homemade Tzatziki Sauce

While the marinated chicken and grilled vegetables are certainly stars, the true hero of this dish—and indeed, many Greek-inspired meals—is the tzatziki sauce. This creamy, refreshing dip is nothing short of addictive. Many have confessed to nearly eating it by the spoonful straight from the bowl, and for good reason!

For years, the mere mention of “tzatziki” might have seemed daunting due to its unique spelling, or perhaps its delicious taste remained an undiscovered secret. But fear not! Mastering the pronunciation is simpler than you think (here’s a quick tutorial if you’re curious!), and discovering its incredible flavor and surprisingly easy preparation will be a game-changer in your kitchen.

At its heart, tzatziki is a delightful cucumber and yogurt sauce. For these kebabs, the succulent chicken and tender-crisp vegetables are absolutely divine when dipped into this cool, tangy concoction. But its utility doesn’t end there! Leftover tzatziki is perfect for dipping fresh vegetables, enhancing salads, or adding a creamy, flavorful spread to sandwiches. It’s a versatile condiment that truly brightens any meal.

Imagine serving these kebabs with a side of warm, fluffy homemade flatbread, dipped generously into a big bowl of tzatziki. That combination is nothing short of heavenly – the soft, warm bread paired with the cool, garlicky, and refreshing sauce is an experience you won’t soon forget. It’s a pairing that goes beyond expectations, making every bite an unforgettable delight.

Crafting the Perfect Greek Chicken Kebab

The secret to truly tender and flavorful chicken kebabs lies in a well-balanced marinade. Our Greek marinade is a symphony of flavors, where fresh lemon juice acts as a natural tenderizer and provides a bright, zesty note. Yogurt in the marinade helps to keep the chicken moist and succulent, while a blend of dried oregano, basil, thyme, and coriander brings that distinctive Mediterranean aroma and taste. Don’t skip the fresh garlic – it’s crucial for depth of flavor!

When it comes to vegetables, zucchini, red peppers, and red onion are classic choices that grill beautifully and add color and sweetness. However, feel free to experiment with cherry tomatoes, bell peppers of different colors, or even mushrooms. The key is to cut the vegetables into pieces roughly the same size as the chicken, ensuring even cooking. For optimal results and to prevent overcooking the chicken while waiting for the vegetables to soften, consider threading the vegetables onto separate skewers. This allows you to remove the chicken when perfectly done and continue cooking the vegetables until they reach your desired tenderness.

Grilling these kebabs over medium-high heat allows for a beautiful char and quick cooking, ensuring the chicken remains juicy. A few minutes per side are usually all it takes to achieve that perfect golden-brown exterior and thoroughly cooked interior. Remember to keep an eye on them, as grilling times can vary based on your grill’s heat and the size of your chicken pieces.

The Art of Tzatziki: Tips for Success

A truly great tzatziki sauce begins with good quality plain Greek yogurt, which is naturally thick and creamy. If you only have regular plain yogurt, don’t worry! You can easily strain it through cheesecloth or a coffee filter for several hours (or overnight) to remove excess moisture, yielding a texture comparable to Greek yogurt. This step is essential for a thick, luscious sauce that won’t be watery.

The cucumber is another critical component. After shredding, it’s vital to squeeze out as much water as possible. This prevents the tzatziki from becoming watery and ensures a rich, concentrated flavor. A clean kitchen towel works wonders for this task. Fresh garlic, red wine vinegar for a touch of tang, and a hint of fresh lemon juice complete the flavor profile. A final drizzle of good quality extra virgin olive oil adds a luxurious finish. For the best flavor development, always make your tzatziki at least 30 minutes in advance and refrigerate it. This allows all the ingredients to meld together beautifully.

What To Serve With These Delicious Kebabs:

These Greek chicken kebabs are incredibly versatile and pair well with a variety of sides to complete your Mediterranean feast:

  • Simple Skillet Green Beans: A quick and easy vegetable side that complements the flavors perfectly.
  • Pita Bread Salad: A refreshing and crunchy salad, or opt for homemade (or store-bought) Greek pita flatbread on the side for dipping.
  • **Lemon Herb Rice Pilaf:** While my previous attempt at yellow rice was a flop, a simple lemon herb rice pilaf would be a wonderful accompaniment. Cook rice with chicken broth, a squeeze of lemon, and fresh herbs like dill or parsley for a light and flavorful grain.
  • **Quinoa Salad:** For a lighter, protein-packed grain, a simple quinoa salad with chopped cucumbers, tomatoes, and a light lemon vinaigrette is an excellent choice.
  • **Roasted Potatoes:** Crispy roasted potatoes seasoned with oregano and garlic would be a hearty and satisfying side.

These Grilled Greek Chicken Kebabs with Simple Tzatziki Sauce embody everything you look for in a perfect meal: they’re healthy, remarkably easy to prepare, and unbelievably tasty. They are guaranteed to become a new favorite in your grilling repertoire.

Ingredients

Tzatziki Sauce:

  • 2 cups plain Greek yogurt
  • 1 English cucumber, shredded and squeezed of excess water
  • 1 clove garlic, pressed or finely minced
  • 1 teaspoon red wine vinegar
  • Salt and pepper, to taste
  • Squeeze of fresh lemon juice
  • Extra virgin olive oil, for drizzling

Marinade:

  • 4 cloves garlic, finely minced
  • 2 tablespoons fresh lemon juice, from about 1 large lemon
  • 1 tablespoon red wine vinegar
  • 2 tablespoons olive oil
  • 2 tablespoons plain yogurt
  • 1 teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon dried thyme
  • ½ teaspoon dried coriander
  • ½ teaspoon salt
  • ¼ teaspoon pepper

Chicken and Vegetables:

  • 2 pounds boneless skinless chicken breasts, cut into 1-inch pieces
  • 3 small to medium zucchini, sliced 1/2-inch thick
  • 1-2 red peppers, cut into 1-inch squares
  • 1 red onion, cut into 1-inch squares

Instructions

  • Prepare the Tzatziki Sauce: Wrap the shredded cucumber in a clean kitchen towel and squeeze firmly to remove as much water as possible. In a medium bowl, combine the drained cucumber with Greek yogurt, pressed garlic, red wine vinegar, salt, pepper, and a squeeze of fresh lemon juice. Stir until well combined. Drizzle lightly with extra virgin olive oil. Cover and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
  • Make the Marinade: In a liquid measuring cup or a small bowl, whisk together all the marinade ingredients: minced garlic, fresh lemon juice, red wine vinegar, olive oil, plain yogurt, dried oregano, dried basil, dried thyme, dried coriander, salt, and pepper.
  • Marinate the Chicken: Place the cut chicken pieces in a resealable gallon-size Ziploc bag or a shallow dish. Pour the prepared marinade over the chicken, ensuring all pieces are well coated. Seal the bag (or cover the dish) and refrigerate for 1-2 hours. Do not marinate for longer than 2 hours as the lemon juice can start to break down the chicken too much.
  • Prepare Skewers: If you are using wooden skewers, soak them in water for at least 15-20 minutes prior to assembly. This prevents them from burning on the grill.
  • Assemble Kebabs: Thread the marinated chicken pieces, zucchini slices, red pepper squares, and red onion squares alternately onto the prepared skewers. Arrange them as desired for a colorful presentation. Lightly sprinkle the assembled kebabs with a little extra salt and pepper on both sides before grilling.
  • Grill the Kebabs: Preheat your grill to medium to medium-high heat. Place the kebabs on the hot grill. Cook for about 2-3 minutes per side, turning occasionally, until the chicken is cooked through and has nice char marks, and the vegetables are tender-crisp. The internal temperature of the chicken should reach 165°F (74°C).
  • Serve: Remove the kebabs from the grill and serve immediately with the chilled tzatziki sauce for dipping. Enjoy your vibrant and flavorful Greek meal!

Notes

Chicken & Vegetables Skewering: Assembling the kebabs with chicken and vegetables on the same skewer, as pictured, will result in tender chicken and crisp-tender (slightly crunchy) vegetables. If you prefer your vegetables softer, they will require a longer cooking time. To prevent the chicken from overcooking, consider skewering the vegetables on separate sticks to cook independently. This allows you to achieve the perfect texture for both components.

Tzatziki Sauce Preparation: For optimal flavor and texture, it is highly recommended to prepare the tzatziki sauce ahead of time. Refrigerate it for at least 30 minutes, or even up to 1-2 days, to allow the flavors to deepen and blend beautifully. If Greek yogurt is not available, regular plain yogurt can be used, but it must be strained. Place the regular yogurt in a colander lined with cheesecloth or a coffee filter set over a bowl and refrigerate for several hours. This process removes excess moisture, ensuring the sauce is thick, creamy, and not watery.
