  • ½ cup (43 g) shredded coconut, unsweetened for best results
  • ½ cup (43 g) natural, unsweetened or Dutch-process cocoa powder (a blend of both works wonderfully for depth of flavor)
  • 1 to 2 tablespoons extra-virgin coconut oil, no need to melt beforehand
  • ½ tablespoon vanilla extract
  • Pinch of salt, optional, but enhances flavors

  • Add all the listed ingredients into a food processor. Process until the ingredients are finely chopped and the mixture forms a cohesive, crumbly texture. The duration of processing can be adjusted based on your desired coarseness or fineness. Crucially, the mixture should hold together firmly when a small amount is pressed or rolled between your fingers. If the mixture feels too dry and crumbly, incorporate an additional tablespoon of water (or melted coconut oil) and process again until it achieves a more pliable, easy-to-handle consistency.
  • Once the mixture is ready, roll it into uniform, tablespoon-sized balls. For consistent portions, a #60 cookie scoop works perfectly. These delightful bites can be enjoyed immediately. For optimal freshness and to firm them up, store them covered in the refrigerator for up to a week. They also freeze beautifully for longer storage!

Notes

Coconut: For the purest flavor and to maintain the healthy aspect, I consistently use unsweetened shredded coconut (available at stores like Trader Joe’s or various online brands). While sweetened shredded coconut can be substituted, be aware that it will result in a noticeably sweeter final product.

Almonds: Feel free to experiment with slivered or sliced almonds in place of whole almonds if that’s what you have on hand. If measuring by volume, slightly reduce the amount as these forms tend to compact more in a measuring cup compared to whole almonds. If measuring by weight, the quantity will remain the same regardless of the almond type.
