Preheat your oven to 350 degrees F (175 C). Line an 8×8-inch aluminum baking pan with parchment paper, leaving an overhang on two sides to easily lift the bars later. Alternatively, simply grease the pan thoroughly. Lightly coat the lined or greased pan with nonstick cooking spray.

In a large mixing bowl, whisk together the flour, granulated sugar, salt, baking powder, and fresh lime zest until well combined.

In a separate bowl or a large liquid measuring cup, whisk together the two large eggs, one large egg yolk, fresh lime juice, vanilla extract, and coconut extract.

Pour the slightly cooled melted butter into the dry ingredients. Immediately follow with the egg and lime juice mixture. Mix everything together just until combined and no dry streaks of flour remain. Be careful not to overmix.
