Ingredients

  • 1 cup (227 g) unsalted butter, softened to room temperature (not too soft!)
  • 1 ½ cups (318 g) packed light brown sugar
  • ½ cup (106 g) granulated sugar
  • 1 teaspoon baking powder
  • ¾ teaspoon table salt
  • ½ teaspoon baking soda
  • 2 large (100 g) eggs
  • 1 tablespoon vanilla extract
  • 2 ¾ cups (390 g) all-purpose flour
  • ⅔ cup (57 g) Dutch-process or natural, unsweetened cocoa powder

Topping:

  • ½ cup heavy cream
  • 1 ½ cups (255 g) semisweet chocolate chips
  • Rainbow candy coated mini chocolate chips (see note)

Instructions

  • Preheat oven to 350 degrees F (see note on baking temperature!). Line half sheet pans with parchment paper; set aside.
  • For the cookies: In a large bowl, using an electric handheld mixer or a stand mixer fitted with the paddle attachment, cream together the softened butter, packed light brown sugar, granulated sugar, baking powder, salt, and baking soda. Beat until the mixture is light, fluffy, and well-combined, typically 1 to 2 minutes.
  • Add the large eggs and vanilla extract. Mix until just combined, being careful not to overmix. Scrape down the sides of the bowl as needed to ensure all ingredients are incorporated.
  • Gradually add the all-purpose flour and cocoa powder to the wet ingredients. Mix on low speed until the ingredients are just evenly combined and no dry streaks of flour or cocoa powder remain. Overmixing can lead to tough cookies.
  • Scoop the cookie dough into 2-tablespoon size balls. Gently roll each portion between your palms until smooth and round (see note for making larger cookies). Place the cookie dough balls several inches apart on the prepared baking sheets to allow for proper spreading.
  • Bake for 10 to 11 minutes. The cookies are ready when they are lightly puffed, set around the edges, but still appear soft and slightly underbaked in the center. This ensures maximum fudginess.
  • Optional, but Recommended: Immediately upon removing the cookies from the oven, use a flat-bottomed glass or a mug to gently press down on the slightly domed tops of each cookie. This action creates an even thickness and an extra fudgy center, while also providing a smooth surface for frosting. Do not smash them flat; a gentle press is all that’s needed to create a thick, even plateau.
  • Allow the baked cookies to cool on the baking pans for several minutes before carefully transferring them to a wire cooling rack to cool completely. Ensuring they are fully cool before frosting is crucial for the ganache to set properly.
  • For the ganache: Place the semisweet chocolate chips in a medium heatproof bowl.
  • In a small saucepan or microwave-safe bowl, heat the heavy cream until it begins to steam and small bubbles form around the edges (do not boil vigorously). Pour the hot cream over the chocolate chips, ensuring they are fully submerged. Let the mixture sit undisturbed for 2 to 3 minutes to allow the chocolate to melt. Then, stir or whisk gently from the center until the mixture is completely glossy, smooth, and emulsified.
  • Allow the ganache to cool at room temperature for 5 to 10 minutes. This will allow it to thicken slightly to an easily spreadable consistency.
  • Once the cookies are completely cooled, frost each with a dollop of the slightly thickened ganache. Before the ganache has a chance to set, generously sprinkle with rainbow candy-coated chips.
  • Serve immediately while the ganache is still soft, or let the cookies sit at room temperature for an hour or so until the ganache sets to a firm, smooth finish. For an absolutely irresistible experience, try serving them chilled from the refrigerator. They are truly delicious either way!

Rainbow Chips: For that authentic ‘cosmic brownie’ vibe, these are the rainbow chips I recommend. If this link is unavailable, simply search for “rainbow baking chips” online or on Amazon. Excellent substitutes include Mini M&Ms, flat colorful sprinkles (like confetti sprinkles), crisp chocolate pearls, or other colorful sprinkle mixes.

Baking Temperature Adjustment: If your oven tends to bake cooler than standard or if your cookies frequently spread too much and flatten, you might consider increasing the baking temperature slightly to 375 degrees F (190 degrees C).
