  • ½ cup (113 g) butter, softened to room temperature (salted is recommended)
  • 4 ½ cups (513 g) powdered sugar

  • 1 tablespoon fresh lemon juice

  2. In a large bowl with an electric mixer (or in the bowl of a stand mixer fitted with the paddle attachment), cream together the softened butter, granulated sugar, and fresh lemon zest until the mixture is light and fluffy, about 3-4 minutes.
  3. Add the room temperature eggs one at a time, mixing well after each addition. Stir in the vanilla extract until just combined, scraping down the sides of the bowl as needed to ensure everything is incorporated.
  4. In a separate medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing on low speed until partly combined. Large dry streaks are acceptable; do not overmix at this stage.
