The Family’s New Favorite: Unstuffed Sheet Pan Chicken Cordon Bleu

Proof of its undeniable appeal came from my 10-year-old, a discerning critic if there ever was one, who declared, “Mom, this is the best thing I’ve ever eaten in my life.” This pronouncement holds significant weight, especially considering he recently rediscovered chocolate after a year-long hiatus. For this chicken (and its accompanying broccoli!) to overshadow the excitement of long-awaited treats speaks volumes. Yes, this unstuffed sheet pan chicken cordon bleu earned incredibly high praise in our household, solidifying its spot in our regular rotation.

While I adore traditional chicken cordon bleu—it’s truly one of my all-time favorite meals for its classic, rich flavors—the preparation can often be quite involved. From pounding chicken breasts to carefully stuffing them with ham and cheese, it’s a dish usually reserved for special occasions or when I have extra time on my hands.

I even have a super easy (and super popular) chicken cordon bleu recipe that hints at the “unstuffed” concept we’re embracing today, simplifying the process without compromising on taste. And for those who, like me, can’t get enough of this delightful flavor combination, there are several other creative twists on cordon bleu available to explore and expand your culinary repertoire.

Elevating Simplicity: The Unstuffed Sheet Pan Difference

Today’s recipe, however, takes the beloved chicken cordon bleu and elevates its simplicity to an entirely new level. The “unstuffed” aspect means you can skip the tedious step of trying to get ham and cheese perfectly tucked inside the chicken. Instead, all those delectable flavors are layered right on top, creating a magnificent crust and a burst of taste in every bite.

But the innovation doesn’t stop there. This recipe proudly wears the badge of a sheet pan dinner, a culinary hero for busy weeknights. This means your main course and side dish—in this case, perfectly roasted broccoli—cook together on a single pan. The result? Minimal cleanup, maximum flavor, and dinner on the table faster than you thought possible. It’s truly a main course that earns the phrase: winner, winner, chicken dinner!

The Flavor Profile: Simple Yet Sophisticated

The flavor of this unstuffed sheet pan chicken cordon bleu is absolutely phenomenal, especially considering how incredibly simple it is to prepare! The secret lies in a few key ingredients that deliver a knockout punch. The crumbled Ritz crackers on top, for instance, create an irresistible golden-brown, buttery crunch that perfectly complements the savory chicken. It’s a texture and flavor boost that truly takes this dish from great to extraordinary.

The overall flavor balance is top-notch. For the cheese, I (or rather, Brian, who expertly whipped this up) opted for Gruyere, which offers a wonderfully nutty and complex flavor with excellent melting properties. You can also use Swiss cheese, which will melt a bit more, providing a slightly gooier texture. This meal made its debut a couple of Sundays ago when Brian surprised us by getting home from church before me. Seeing dinner already made, and then discovering how legitimately delicious it was, almost brought me to tears of joy!

My contribution was quickly throwing together our tried-and-true simple drop biscuits, sprinkled with Trader Joe’s Everything Bagel seasoning for an extra layer of flavor. They were incredibly good and would normally steal the show, but seriously, that chicken! We simply couldn’t stop raving about it. This sheet pan chicken cordon bleu was a massive win, a testament to how simple ingredients can create something truly spectacular.

Perfect Pairings: What to Serve With Your Sheet Pan Dinner

This American main course is designed to be a complete meal in itself, thanks to the roasted broccoli cooking alongside the chicken. However, if you’re looking to round out your dinner or add another delicious side, here are some fantastic suggestions that complement the rich flavors of chicken cordon bleu:

  • Buttermilk Drop Biscuits: As mentioned, these are a heavenly addition, offering a soft, fluffy texture and a hint of tang that pairs beautifully with the savory chicken. Easy to make and incredibly satisfying.
  • Cheesy Bacon and Garlic Smashed Potatoes: For those who love a hearty potato side, these smashed potatoes provide a comforting, flavorful option with a crispy exterior and tender interior, loaded with cheese and bacon.
  • Simple Green Salad: A crisp, fresh green salad with a light vinaigrette would offer a refreshing contrast and a welcome touch of brightness to the meal.
  • Wild Rice Pilaf: A nutty and aromatic wild rice pilaf would be a sophisticated and filling accompaniment, soaking up any delicious juices from the chicken.
  • Steamed Asparagus: If you’re not in the mood for roasted broccoli or simply want another green vegetable, steamed asparagus is a quick and elegant choice.

Ingredients

  • 2 tablespoons olive oil
  • 1 ½ pounds broccoli, cut into spears/thin wedges (see pictures in the post for a visual)
  • Salt and pepper
  • 1 ½ to 2 pounds boneless skinless chicken breasts (4-5 breasts), pounded to 1/4-inch thick or cut in half to form two thinner cutlets (see note)
  • 2 tablespoons Dijon mustard
  • 4 to 8 slices deli ham, exact amount depends on brand/size of slices
  • 1 cup (114 g) shredded Gruyere or Swiss cheese
  • ¾ cup Ritz crackers (about 15), coarsely crushed

Instructions

  • Preheat your oven to 450°F (230°C). Ensure an oven rack is positioned in the lower-middle part of the oven. Lightly brush a large, rimmed baking sheet (approximately 11×18 inches) with 1 tablespoon of olive oil.
  • In a bowl, toss the prepared broccoli florets with the remaining 1 tablespoon of olive oil, 1/4 teaspoon of salt (coarse or kosher salt works best), and a pinch of freshly ground black pepper until evenly coated.
  • Pat the chicken breasts thoroughly dry with paper towels to ensure a crispier finish. Season both sides lightly with salt and pepper. Arrange the chicken breasts in a single layer on one side of the oiled baking sheet. To fit them better, you can alternate the thicker and thinner ends as you lay them down. Placing them close together without overlapping will help contain the cheese as it bakes.
  • Evenly spread a light layer of Dijon mustard over the top surface of each chicken piece. Next, lay 1 to 2 slices of deli ham over each chicken breast, ensuring it covers the mustard. Finally, sprinkle about 1/4 cup of the shredded Gruyere or Swiss cheese over the ham on each chicken piece.
  • Distribute the coarsely crushed Ritz cracker crumbs evenly over the cheesy chicken. Gently press the crumbs down with your hand to help them adhere and prevent them from loosening during baking.
  • Arrange the seasoned broccoli in a single, even layer on the opposite side of the baking sheet, ensuring it doesn’t overlap too much for optimal roasting.
  • Bake for approximately 20 minutes, or until the chicken reaches an internal temperature of 160°F (71°C) on an instant-read thermometer and the broccoli is roasted to a tender-crisp perfection. The precise baking time may vary based on the thickness of your chicken breasts. If the chicken requires additional cooking time but the broccoli appears done, remove the broccoli from the sheet pan, transfer it to a plate, and loosely tent it with foil while the chicken finishes baking.
  • Once cooked, I highly recommend removing the chicken from the sheet pan immediately to prevent it from sitting in any accumulated cooking liquids, which can make it less crisp. Serve hot and enjoy!

Notes for Success

Chicken Preparation: For this quick-cooking recipe, using thinner chicken breasts is key to achieving a perfectly cooked meal in minimal time. I often opt for the convenient thin-cut chicken breasts found in freezer bags at stores like Costco. Alternatively, you can easily prepare regular thick chicken breasts by slicing them horizontally in half, similar to opening a hamburger bun, to create two thinner cutlets. You’ll want a total of approximately 1 1/2 to 2 pounds of chicken for this recipe to serve 5 people generously.

Increasing Quantity for Larger Families: Our family of seven often requires larger portions. For this reason, I frequently increase all ingredient quantities by half and utilize two separate sheet pans to ensure everything cooks evenly without overcrowding. This method maintains the integrity of the dish while accommodating more servings.

Cheese Alternatives: While Gruyere offers a wonderfully nutty flavor, Swiss cheese is a fantastic and readily available alternative that melts beautifully. Feel free to experiment with other good melting cheeses like Monterey Jack or even a sharp white cheddar if you’re looking for a different flavor profile.

Broccoli Perfection: For the best roasted broccoli, ensure your florets are cut into thin wedges or spears to allow for maximum surface area contact with the hot sheet pan, resulting in delicious caramelization and tender-crisp texture. Don’t be afraid of a little char; it adds incredible flavor!
