Ingredients

  • 3-4 pounds boneless pork butt roast, trimmed of excess fat and cut into large chunks
  • 1 white or yellow onion, peeled and quartered
  • 3 2-inch strips orange zest (see note)
  • 1/3-1/2 cup orange juice
  • 3 2-inch strips lime zest (see note)
  • 2 tablespoons fresh lime juice
  • 5 garlic cloves, finely minced
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 2 teaspoons salt
  • 1 ½ teaspoons black pepper
  • 2 bay leaves

Instructions

  1. Place the pork in the bottom of a 4- or 5-quart slow cooker. Add the onion, orange zest, orange juice, lime zest, lime juice, garlic, cumin, oregano, salt, pepper, and bay leaves. Turn the pork pieces a bit to ensure the spices are evenly distributed.
  2. Cover and cook on low for 8 to 10 hours (or on high for 5 to 7 hours), until the pork is fork-tender.
  3. Using a slotted spoon, carefully remove the cooked pork from the slow cooker to a 9×13-inch or similar-sized oven-safe pan. Use two forks to easily shred the pork into desired pieces.
  4. Pour all remaining contents (solids and liquid) from the slow cooker into a strainer placed over a bowl to collect the delicious cooking liquid. Discard the strained solids and reserve the liquid. This liquid is packed with flavor and will keep your carnitas moist.
  5. To crisp the edges of the pork (optional, but highly recommended for authentic texture): Preheat your broiler to high and position an oven rack about 6-8 inches away from the heating element. Pour about 1 cup of the reserved cooking liquid over the shredded pork in the pan. Broil the pork, watching it very closely, for a couple of minutes until it develops brown and crispy spots. Give the pork a good stir or flip and broil again for another minute or two until more edges crisp up. Be vigilant, as a broiler can burn food quickly; you want crispy bits, not charred. The goal is tender pork with delightful crispy edges.
  6. Season the pork with additional salt and pepper to taste. Transfer it to a serving plate or platter, if desired. Use extra reserved liquid from the slow cooker to moisten the pork as needed, ensuring it stays juicy. Serve immediately with fresh lime wedges, warm tortillas, chopped fresh cilantro, and your choice of other delicious toppings.

Notes

Zest Strips: To obtain the long strips of zest from the orange and lime, use a sharp paring knife or a vegetable peeler. Carefully cut away only the outermost colored layer of the peel, avoiding as much of the white, pithy skin underneath as possible, as the pith can be bitter. Don’t worry about perfect rectangular strips; squares or large ovals work just as well. The reason for using strips rather than finely zesting is that these larger pieces can be easily removed at the end of cooking before serving, which prevents the pork mixture from developing an overly bitter or overpowering citrus flavor over time.

Freezable: This recipe is fantastic for meal planning! Any leftover cooked and cooled pork freezes exceptionally well for future meals. Simply portion it into freezer-safe bags or containers and thaw as needed.
