  • 2 cups (340 g) chocolate chips or chocolate chunks

  1. Preheat your oven to 350 degrees F (175°C). Lightly grease a 9×13-inch baking pan with cooking spray, or line it with parchment paper and then lightly grease the parchment. Set aside.
  2. In a large mixing bowl, combine the melted butter, granulated sugar, brown sugar, whole egg, egg yolk, vanilla extract, baking soda, and salt. Mix thoroughly by hand with a whisk or spatula, or use an electric mixer on low speed, until all ingredients are well-combined and the mixture is smooth.
  3. Add the all-purpose flour, oats (quick or old-fashioned), and chocolate chips to the wet ingredients. Mix until just evenly combined. Be careful not to overmix the dough once the flour is added, as this can result in tougher bars.
  4. Press the cookie dough evenly into the prepared 9×13-inch baking pan. Ensure the dough is spread from edge to edge for even baking.

Update: The original recipe for these bars, published in 2008, used 1 ¾ cups of flour. Through extensive testing over the years, I’ve found that reducing the flour to 1 ½ cups results in significantly softer and chewier bars, which is how I’ve updated the recipe for optimal deliciousness.
