  • juice of 1 lime
  • 1 medium orange, halved and juiced, rinds reserved

For Tortillas & Garnishes:

  • 8 small corn or flour tortillas
  • 1 small red onion, thinly sliced or finely diced
  • ½ cup fresh cilantro, chopped
  • Sour cream or Greek yogurt, and/or sliced avocados, if desired
  • 1 cup Monterey Jack cheese, shredded
  • 2 limes, cut into wedges for serving

Instructions

  • Prepare the Pork: Begin by generously rubbing the pork chunks all over with kosher salt. Place the salted pork in a covered dish and refrigerate for at least 1 hour, or preferably overnight, to allow the salt to penetrate and tenderize the meat.
