  • 1 tablespoon olive oil

  • 1 to 1 ½ pounds ground beef
  • 4 cups beef broth or stock
  • 3 bay leaves
  • 1 teaspoon dry mustard
  • 1 teaspoon cayenne pepper
  • 2 cans (28-ounces each) whole stewed tomatoes
  • 1 can (15-ounces) kidney beans, rinsed and drained
  • 1 can (15-ounces) black beans, rinsed and drained
  • 1 to 2 cups chopped sun-dried tomatoes (see note)
  • ¼ cup brown sugar
  • 1 tablespoon creole or cajun seasoning blend
  • 2 tablespoons balsamic vinegar

Instructions

  • In a 5- or 6-quart pot set over medium heat, warm the olive oil until it’s hot and shimmering. Add the diced onion, bell pepper, celery, and minced garlic. Sauté for 3 to 4 minutes, or until the onions begin to soften and become translucent, releasing their fragrant aromas.
  • Add the ground beef to the pot. Cook, breaking the meat into small, even pieces with a spoon, until it is thoroughly browned and no longer pink, typically taking about 5 to 6 minutes. Carefully drain any excess grease from the pot to prevent the chili from becoming overly oily.
  • Pour in the beef broth or stock. Stir in the bay leaves, dry mustard, and cayenne pepper. Bring the mixture to a gentle simmer and continue to cook until the liquid has reduced by approximately half, which helps to concentrate the flavors. If a noticeable reduction doesn’t occur after about 25 minutes, you may proceed with the next step.
  • In a food processor or blender, carefully purée the whole stewed tomatoes until smooth. Add the puréed tomatoes to the pot, along with the rinsed and drained kidney beans and black beans, chopped sun-dried tomatoes, brown sugar, Creole or Cajun seasoning, and balsamic vinegar. Stir all the ingredients well to combine them thoroughly.
  • Return the chili to a simmer, then reduce the heat to medium-low. Let it cook for a full two hours, stirring occasionally to prevent sticking and adjusting the heat as necessary to maintain a gentle simmer. This long cooking time is crucial for the flavors to fully develop and meld. Remove from heat, taste, and add salt if needed. Remember, this chili tastes even better after a day or two; it can be easily reheated in a slow cooker or on the stovetop.

Sun-Dried Tomatoes: For this recipe, we recommend using jarred sun-dried tomatoes packed in oil. Before chopping, drain them thoroughly and give them a light rinse to remove excess oil. The original recipe suggested two cups of chopped sun-dried tomatoes, but over the years, I’ve found that one cup suits my personal preference perfectly, offering a balanced tang without overwhelming the other flavors. Feel free to use the full two cups if you desire a more intense sun-dried tomato presence. If you’re using dry sun-dried tomatoes, remember to rehydrate them first according to package instructions, then chop and measure before adding them to the chili. They are key to the unique “sweet heat” and tanginess that makes this Louisiana chili so special!
