A Timeless Classic, Now Even Easier

This beloved recipe has graced my site since 2010, steadily earning its place as a go-to treat. Over the years, its popularity has only grown, and for good reason. What began as a fantastic cookie bar recipe has evolved, streamlining into an even simpler, more efficient one-bowl method. This minor adjustment makes them not just delicious, but also incredibly convenient, perfect for busy weeknights or impromptu baking sessions. The essence of the original remains intact – that signature thick, chewy texture and rich flavor – but the preparation is now quicker and requires less cleanup.

Cookie Bars vs. Traditional Cookies: The Convenience Factor

Let’s be clear: there’s absolutely a place in the world for classic, individual chocolate chip cookies. Recipes like my Super Soft Chocolate Chip Cookies, Best Chocolate Chip Cookies, and Soft and Chewy Chocolate Chip Cookies hold a special spot in my heart. However, there are undeniable advantages to opting for the swift and simple cookie bar format. Imagine a world where you don’t have to scoop dozens of individual cookies, juggle multiple baking sheets, or worry about eating all the raw dough before the last batch even makes it to the oven. That’s the world of chocolate chip cookie bars.

These bars condense all the beloved qualities of a chocolate chip cookie into one convenient pan. The uniformity in baking ensures every piece is perfectly soft and chewy, with consistent flavor throughout. This method saves you precious time and effort, making it ideal for large gatherings, potlucks, or simply when a powerful cookie craving strikes and you need a quick, delicious fix. Once you experience the ease and delightful results of these bars, you might find yourself reaching for this recipe even more often than your most cherished individual cookie recipes.

Achieving the Perfect Soft & Chewy Texture

The secret to the “thick and chewy” perfection of these cookie bars lies in a few key ingredients and techniques. First, melted butter is crucial. Unlike creamed butter, which incorporates air for a cake-like texture, melted butter contributes to a dense, chewy crumb. Combining both light brown sugar and granulated sugar also plays a significant role. Brown sugar adds moisture and molasses flavor, enhancing chewiness, while white sugar ensures the edges crisp up beautifully. The addition of an extra egg yolk further enriches the dough, providing fat and protein that contribute to the bars’ decadent chewiness and tenderness.

A Family Favorite: Simple Enough for Young Bakers

These easy chocolate chip cookie bars are so straightforward that they’ve become a favorite baking project for my kids. Even my 9-year-old can confidently get them into the oven with minimal fuss and maximum excitement. The process is virtually foolproof, making it a fantastic recipe for introducing younger family members to the joys of baking (though the cleanup, as you might expect, still presents a challenge!). This simplicity underscores why they’re such a reliable recipe for any baker, regardless of experience level.

Customizing Your Chocolate Chip Cookie Bars

While classic semisweet chocolate chips are always a winner, this recipe is incredibly forgiving and open to delicious flavor variations. Consider these delightful swaps and additions to make these bars uniquely yours:

  • Chocolate Varieties: While I’m partial to dark chocolate chips for their rich, deep flavor, feel free to experiment. Milk chocolate chips offer a sweeter, creamier profile. White chocolate chips add a delicate sweetness and a beautiful contrast. Or, why not combine a few different types for a complex chocolate experience?
  • Mix-ins: M&M’s on top are always a fantastic decision, adding a fun pop of color and candy shell crunch. My husband, Brian, particularly loves it when I venture out and include butterscotch chips – a truly underrated addition! Other wonderful mix-ins include chopped nuts (pecans or walnuts), toffee bits, or even a swirl of caramel before baking.

Ultimately, the choice of chocolate is a deeply personal one. I’ll simply ask that if white chocolate chips are your preference, you keep them just a little bit away from my dark chocolate-laden bars! The beauty of this recipe is its versatility, allowing you to tailor it to your precise cravings and preferences.

Baking Tips for Flawless Cookie Bars

  • Pan Preparation: Always line your 9×13-inch baking pan with foil, leaving an overhang on the sides. This simple step makes it incredibly easy to lift the entire slab of cooled bars out of the pan for clean, effortless cutting. Don’t forget to spray the foil with nonstick cooking spray!
  • Oven Temperature and Rack Position: Baking at 325°F (160°C) on the lower-middle oven rack helps the bars cook evenly, ensuring a chewy interior without overly browned edges.
  • Don’t Overmix: Once you add the flour, mix only until no dry streaks remain. Overmixing develops gluten, which can lead to tough, rather than tender, bars.
  • Knowing When They’re Done: The bars should be light golden brown around the edges and slightly firm to the touch in the center. The edges might just begin to pull away from the pan. They will continue to set as they cool, so resist the urge to overbake.
  • Cooling is Key: Allow the bars to cool completely on a wire rack before cutting. This ensures they firm up properly and makes for cleaner, more uniform slices.

Ingredients

  • 12 tablespoons (170 g) salted butter, 1 1/2 sticks, melted and cooled slightly
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • 1 cup (212 g) light brown sugar
  • ½ (106 g) cup granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 2 teaspoons vanilla extract
  • 2 cups + 2 tablespoons (298 g) all purpose flour
  • 2 cups (340 g) chocolate chips or chocolate chunks, semisweet, bittersweet, milk, white, peanut butter…the options are endless!

Instructions

  • Preheat the oven to 325 degrees F (160°C). Adjust the oven rack to the lower-middle position. Line a 9×13-inch baking pan with foil, allowing the excess to hang over the edges of the pan by about 1 inch. This overhang will serve as handles to easily lift the bars from the pan after they have baked and cooled. Spray the foil-lined pan generously with nonstick cooking spray to prevent sticking.
  • In a large mixing bowl, whisk together the slightly cooled melted butter, salt, and baking soda until they are thoroughly combined. Add the light brown sugar and granulated sugar to the mixture and stir well until the sugars are evenly incorporated and no lumps remain. Next, add the large egg, egg yolk, and vanilla extract, mixing vigorously until the wet ingredients are completely blended and smooth.
  • Add the all-purpose flour directly into the wet ingredients in the large bowl. Using a sturdy rubber spatula or a wooden spoon, begin gently folding the flour into the wet mixture. After a few stirs, when some streaks of flour still remain visible, add the chocolate chips or chocolate chunks. Continue to mix just until all the dry streaks of flour disappear and the chocolate is evenly distributed throughout the thick dough. Be careful not to overmix, as this can lead to tough bars. Sometimes, as the dough gets very thick, using your hands can be the easiest way to ensure everything is combined without overworking it.
  • Transfer the prepared cookie bar batter into the foil-lined baking pan. Using your hands or the back of your spatula, press the batter evenly into the bottom of the pan, making sure it reaches all corners and forms a uniform layer.
  • Bake the bars in the preheated oven for 24-28 minutes, or until the edges are light golden brown, the center is slightly firm to the touch when gently pressed, and the edges just start pulling away from the sides of the pan. It’s better to slightly underbake than overbake for maximum chewiness. Once baked, remove the pan from the oven and place it on a wire rack to cool completely to room temperature. This cooling period is crucial for the bars to set properly and achieve their desired texture. After cooling, use the foil overhangs to carefully lift the entire slab of bars from the pan and transfer them to a cutting board. Cut into desired squares and serve.

Notes

Original Recipe: The original recipe, first published in 2010, traditionally used two bowls, separating the dry ingredients from the wet. However, taking inspiration from this fantastic cookie recipe, I’ve simplified the mixing process to make this a convenient one-bowl recipe without compromising on taste or texture. For those who are staunch fans of the original method, you can easily revert by whisking the flour, baking soda, and salt together in a separate small bowl, then adding this dry mixture to the wet ingredients after they’ve been combined. All other aspects of the recipe remain as delicious and reliable as ever.
