For the Chocolate Cake:

  • ⅓ cup (28 g) cocoa powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 4 ounces (113 g) bittersweet chocolate, chopped
  • 6 tablespoons (85 g) unsalted butter
  • ½ cup buttermilk
  • ½ cup (106 g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

For the Creamy Flan:

  • 2 cans (14-ounces each) sweetened condensed milk
  • 2 ½ cups whole milk
  • 6 ounces (170 g) cream cheese, softened
  • 6 large eggs
  • 4 large egg yolks
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Carefully grease a 12-cup nonstick bundt pan, ensuring every nook and cranny is coated to prevent sticking. Pour the caramel sauce evenly into the bottom of the prepared bundt pan. If using store-bought caramel that is too thick, a quick warm-up in the microwave can make it pourable.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set this dry mixture aside. In a separate microwave-safe bowl, combine the chopped bittersweet chocolate and butter. Microwave on 50% power in 1-minute intervals, stirring well after each minute, until the mixture is completely melted and smooth (this typically takes 2-4 minutes). Whisk the buttermilk, granulated sugar, 2 large eggs, and 1 teaspoon vanilla extract into the melted chocolate mixture until thoroughly incorporated. Gradually add the reserved flour mixture to the wet ingredients, stirring until just combined and no dry streaks remain. Pour this chocolate batter evenly over the caramel layer in the bundt pan.
  3. Add all the flan ingredients—sweetened condensed milk, whole milk, cream cheese, 6 large eggs, 4 large egg yolks, and 1 teaspoon vanilla extract—to a blender. Process until the mixture is completely smooth and free of lumps. Slowly and very carefully pour the blended flan mixture over the chocolate cake batter in the bundt pan. Place the filled bundt pan into a larger roasting pan. Carefully transfer the roasting pan to the preheated oven, then pour warm water into the roasting pan until it reaches about halfway up the sides of the bundt pan, creating a water bath. Bake the cake for approximately 75 to 90 minutes, or until a toothpick inserted into the chocolate cake layer comes out clean and an instant-read thermometer inserted into the flan layer registers 180°F (82°C). (Note: baking times can vary; mine typically takes closer to the longer end.) Remove the bundt pan from the water bath (for easier cleanup, you can leave the roasting pan and water in the oven to cool) and place it on a wire rack to cool completely at room temperature. Once cooled, refrigerate the cake for at least 8 hours, or preferably up to 12 hours, to allow it to set properly and for the layers to fully consolidate.
  4. To gracefully remove the cake from the pan, fill a large bowl with hot water. Submerge the bottom third of the bundt pan into the hot water for about 1 minute. This brief warming helps loosen the caramel and prevents sticking. Carefully invert the cake onto a flat serving plate or cake platter. To do this, place your chosen platter securely over the bundt pan opening. Holding both the platter and the bundt pan firmly, gently flip them upside down together. Slowly and carefully lift the bundt pan off the cake, allowing the rich caramel sauce to cascade elegantly over the top of the cake. Serve this magnificent Chocoflan chilled for the best experience.

Plan Ahead: This cake truly benefits from time! It needs to chill for at least 8 hours (and up to 12) before it can be successfully turned out of the bundt pan. This makes it a perfect dessert to prepare a day in advance for parties or special meals.

Water Bath (Bain-Marie): The Chocoflan bakes in a water bath, which helps ensure even cooking and prevents the flan from cracking. You’ll need a large roasting pan or a similar oven-safe dish that can accommodate your bundt pan and hold water. A disposable aluminum roasting pan works perfectly for this purpose.

Bundt Pan Size: The recipe calls for a standard 12-cup bundt pan. If you only have a smaller 9-10 cup bundt pan, don’t worry! You can still make this cake. Simply pour the chocolate batter into the pan, then carefully add the flan mixture until it reaches about ½-inch from the top edge. Discard any remaining flan mixture. This might result in a slightly thinner flan layer, but the cake will still be absolutely delicious and magical!
