  • ⅔ cup BBQ sauce (see note)
  • 1 cup shredded Monterey Jack cheese
  • Chopped chives or green onions, for garnish (optional)

Instructions

  1. In a 12-inch deep skillet (with at least 2 to 3-inch sides) or a 5- to 6-quart pot, heat the oil over medium heat until shimmering. Pat the chicken pieces dry with paper towels and season them lightly with salt and pepper. Add the chicken to the pot in a single layer and cook until golden brown and thoroughly cooked through, stirring occasionally to ensure even cooking. Remove the cooked chicken to a plate and set it aside.
  2. Add the chopped bacon to the same pot and cook until crisp. Once crispy, drain any excess grease from the pot, leaving a little for flavor. Scrape the cooked bacon onto the same plate as the chicken.
