- 7 tablespoons (99 g) very cold butter
- ⅓ cup (75 g) sour cream, chilled
Egg Mixture:
- 8 large eggs
- ¼ cup heavy cream
- ¼ cup milk
- ½ teaspoon salt, I use coarse, kosher salt
- ⅛ teaspoon garlic powder
- Pinch of black pepper, I use coarsely ground
- 1 cup (114 g) finely chopped ham
- 1 cup (114 g) shredded cheddar cheese
- Chopped green onions or chives, for garnish
Instructions

For the pie crust: In a large bowl, whisk together the flour, sugar, and salt. Using the large holes of a box grater, grate the very cold butter into the dry ingredients. With a fork, gently toss the butter and flour mixture until all the butter pieces are evenly coated with flour. The goal here is to coat the butter, not to break it down significantly.

Add the chilled sour cream. Using the same fork, mix the sour cream into the butter/flour mixture by pressing the fork down into the sour cream to mash any large clumps into the flour and butter. After a few turns with the fork, it becomes easiest to use your hands to quickly bring the dough together. It will appear shaggy initially, but as you press it (quickly and firmly to prevent the butter from melting), it should start to form a cohesive ball. If the dough still seems overly dry, add a tablespoon of ice water, one at a time, until it comes together. It’s perfectly fine if there are still a few dry spots or small cracks in the dough.

Gently press the dough mixture into a thick disc shape and wrap it tightly in plastic wrap. Refrigerate for at least 30 minutes, or up to several days, to allow the butter to firm up and the gluten to relax.

Once chilled, roll out the pie crust on a lightly floured counter or on a pastry cloth/board to approximately 1/8-inch thick. Using a 2-inch cookie cutter, cut out 12 circles. (If you prefer the crust to extend higher up the sides of the muffin cups, you can use a slightly larger cookie cutter; there should be enough crust for slightly larger circles.) Lightly grease a 12-cup muffin tin, then gently press each pastry circle into the bottom and slightly up the sides of each muffin cup.

Preheat your oven to 375 degrees F (190 degrees C).
