Instructions

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a large, rimmed baking sheet (11×17-inches) with nonstick cooking spray. (See note below for other pan size variations).
  • For the peanut butter cookie dough: In a large bowl, using a handheld electric mixer, or in the bowl of a stand mixer fitted with the paddle attachment, cream together the softened butter, granulated sugar, and brown sugar until the mixture is light and creamy, about 1-2 minutes. Add the eggs one at a time, beating well after each addition, then mix in the vanilla extract for another 1-2 minutes, scraping down the sides of the bowl as needed to ensure all ingredients are incorporated.
  • Add the creamy peanut butter to the butter-sugar mixture and mix until fully combined and smooth. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until no dry streaks of flour remain. Be careful not to overmix.
  • Reserve approximately 2 1/2 cups of the cookie dough (roughly 20-25 ounces) and set it aside. Press the remaining cookie dough evenly into the bottom and corners of the prepared baking pan. You can use your hands or the back of a spoon to create a smooth, compact base.
  • For the fudge filling: In a microwave-safe bowl (or in a medium saucepan on the stovetop over medium-low heat), combine the sweetened condensed milk, 2 tablespoons of butter, a pinch of salt, semisweet chocolate chips, and 1 teaspoon of vanilla extract.
