  • ¼ cup (53 g) packed light brown sugar

Cheesecake Custard:

  • 4 ounces (113 g) cream cheese, softened
  • Pinch of salt
  • ⅓ cup (71 g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ⅓ cup (75 g) sour cream

Sour Cream Topping:

  • ⅔ cup (151 g) sour cream
  • 2 tablespoons powdered sugar

Instructions

  1. In a large 12-inch skillet or saucepan, melt the 1 tablespoon of butter over medium heat for the apple filling. Add the chopped apples, a pinch of salt, ground cinnamon, and light brown sugar. Cook the mixture, stirring frequently, until the apples become tender and the liquid has thickened into a syrupy consistency, which usually takes about 10 minutes.
  2. Allow the apple mixture to cool completely to room temperature. It’s important that it’s not warm when added to the pie shell to prevent the crust from becoming soggy. For quicker cooling, transfer it to another dish and refrigerate. If you prefer to avoid extra dishes, simply let it cool in the pan. The apple mixture can be prepared a day in advance and stored in the refrigerator.
  3. Preheat your oven to 400 degrees F (200 degrees C).
  4. Prepare the cheesecake layer: In a medium bowl, beat the softened cream cheese, a pinch of salt, and granulated sugar with an electric mixer until the mixture is creamy and smooth, typically 1-2 minutes.
