Succulent Grilled Salmon

Experience the magic of perfectly grilled or foil-baked salmon, brought to life with simple pantry staples. This recipe guarantees tender, succulent, and incredibly flavorful results every time!

For many, serving salmon to the family is a special occurrence, perhaps due to budget considerations or simply the desire to create a memorable meal. When that rare opportunity arises, you want a recipe that delivers without fail. There’s no room for culinary experiments with iffy new ideas when a tried-and-true favorite promises perfection. This particular salmon recipe has earned its place as a cherished staple in my kitchen, consistently delivering exceptional taste and texture that will impress even the most discerning palates.

After nearly a decade, this tender grilled salmon recipe remains my absolute favorite, the one I turn to 99% of the time. While there are other fantastic options, like a delightful maple pecan crusted salmon, this simple preparation stands out for its undeniable deliciousness and ease. The secret lies in everyday ingredients that, when combined thoughtfully, transcend their individual components to create something truly extraordinary. Prepare yourself for the most tender, flavorful, and utterly delicious salmon you’ve ever made at home, proving that gourmet results are achievable with minimal fuss.

Mastering the Perfect Salmon: Grilling vs. Foil Baking Techniques

One of the many beauties of this salmon recipe is its incredible versatility. While it shines brightly when grilled, achieving those coveted golden-crisp grill marks and a delicate smokiness, it’s equally phenomenal when wrapped in foil and baked in the oven. This adaptability makes it a go-to dish regardless of the weather or your preferred cooking method. Whether you’re enjoying a warm summer evening with the grill fired up or seeking a comforting, mess-free meal indoors, this recipe has you covered, ensuring a delicious outcome every time.

Achieving Grilled Salmon Perfection

During the warmer months, cooking salmon directly on the grill grates is my preferred method. Achieving that beautiful char and infusing the fish with a subtle smoky flavor is truly unparalleled. While salmon can be somewhat fragile, preventing it from sticking to the grill has never been an issue for me when following a few key tips. First, ensure your grill is thoroughly preheated for at least 15-20 minutes to reach a consistent medium heat. This initial high heat helps to sear the outside quickly, creating a crust that prevents sticking and locks in juices. Second, generously oil the grates just before placing the salmon. A pastry brush dipped in a high smoke point oil like canola or avocado oil works wonders to create a truly non-stick surface. These simple steps allow the salmon to release easily, maintaining its integrity and beautiful presentation as it cooks. If you’re using a pellet grill, like a CampChef pellet grill, the consistent, indirect heat and delightful smoky flavor it imparts are fantastic for delicate fish like salmon, ensuring even cooking and a tender finish.

The Effortless Foil Packet Method for Baked Salmon

When grilling isn’t an option, or when I simply desire a fuss-free cooking experience with minimal cleanup, the foil packet method truly shines. This technique is especially convenient during colder months or when entertaining guests, offering an incredibly easy way to achieve perfectly cooked salmon every single time. By wrapping the salmon in foil, you create a steamy environment that locks in moisture and concentrates the exquisite flavors of the marinade. This method ensures the salmon remains incredibly tender and moist, practically melting in your mouth. While you might miss out on those visually appealing grill marks, the intensely flavorful and exceptionally tender salmon that emerges from a foil packet more than makes up for it. It’s a testament to how simple techniques can yield gourmet results, making it an ideal choice for a weeknight dinner or a special gathering where ease and flavor are paramount.

Crafting the Irresistible Marinade for Tender Salmon

The heart of this recipe lies in its incredibly simple yet profoundly flavorful marinade. It’s composed of everyday pantry ingredients that, when combined, create a sweet, savory, and slightly tangy profile that perfectly complements the rich taste of salmon. The blend of soy sauce, brown sugar, oil, garlic, and a hint of red pepper flakes (optional, but highly recommended for a subtle kick) works harmoniously to infuse the fish with deep flavor and help tenderize it. Marinating the salmon for at least two hours, and up to eight, allows these flavors to truly penetrate the fillets, ensuring every bite is bursting with deliciousness. This marinade is what elevates humble salmon into an “out of this world” dining experience, making it a reliable crowd-pleaser for any occasion, from weeknight dinners to special gatherings.

Choosing the Best Salmon for Your Dish

The quality of your salmon can significantly impact the final dish. When selecting salmon fillets, look for vibrant, moist flesh without any discoloration or strong fishy odor. Both wild-caught and farm-raised salmon work well in this recipe. Wild-caught varieties, like sockeye or coho, often have a leaner profile and richer color, offering a robust flavor. Farm-raised salmon, such as Atlantic salmon, tend to be fattier and more consistently tender, with a milder taste. Skin-on fillets are often preferred for grilling as the skin helps protect the delicate flesh from drying out and sticking to the grates, resulting in a crispier exterior. If you’re opting for foil baking, skinless fillets can be equally convenient. Whichever you choose, ensure the fillets are of uniform thickness for even cooking; this consistency is key to perfectly cooked salmon.

The Salmon Debate: Lover or Hater? Your Culinary Confessions!

I find it fascinating how people’s opinions on seafood, especially salmon, can be so divided. When friends and family visit, I’m always mindful of those who might not share my enthusiasm for salmon. For them, I happily pivot to other deliciousness, reserving this beloved dish for those who appreciate it as much as I do. But it does make me incredibly curious: Are you a salmon lover or a salmon hater? Do tell! I promise I’m mature enough to handle any response, and our friendship will remain intact, regardless of your culinary preferences! Your honest feedback helps me understand diverse tastes.

Over the years, I’ve enjoyed many exquisite salmon dishes at fine restaurants, often making it my top choice on the menu. Yet, I can honestly say that this home-cooked, tender grilled salmon rivals, and often surpasses, those upscale dining experiences. It’s a testament to the power of simple, well-balanced ingredients and a thoughtful cooking process. The fact that it has remained a steadfast favorite in my kitchen for nearly a decade speaks volumes about its enduring appeal and foolproof preparation. It’s a recipe that has truly stood the test of time, consistently delivering restaurant-quality flavor from the comfort of your own home.

Perfect Pairings: What to Serve with Tender Grilled Salmon

A truly great meal is made even better by its accompaniments. This tender grilled salmon is incredibly versatile and pairs beautifully with a variety of side dishes, transforming a simple protein into a gourmet spread suitable for any occasion. As pictured, serving it with light and fluffy homemade buttermilk biscuits and a refreshing summer roasted veggie orzo salad creates one of the best meals you can imagine. The rich, savory flavors of the salmon are perfectly balanced by the comforting texture of the biscuits and the bright, zesty notes of the orzo salad.

Beyond these delightful suggestions, consider serving your salmon with other fresh, seasonal sides. Roasted asparagus, steamed green beans with a squeeze of fresh lemon, or a vibrant quinoa salad dressed with a light vinaigrette would all be excellent choices. For a heartier meal, a creamy mushroom risotto or a baked sweet potato could provide a satisfying and delicious contrast. Don’t be afraid to experiment with your favorite vegetables and grains to create a personalized meal that complements the delicate flavors of the salmon. The goal is to build a meal that’s not only delicious but also visually appealing and nutritionally balanced, ensuring a delightful dining experience every time.

Ingredients

  • 1 ½ pounds salmon fillets, preferably skinless
  • Lemon pepper seasoning, to taste
  • ⅓ cup soy sauce
  • ⅓ cup brown sugar
  • ⅓ cup water or low-sodium chicken broth
  • ¼ cup oil, like vegetable, canola, or olive oil
  • 1 teaspoon garlic powder or 2-3 cloves garlic, finely minced
  • Pinch of red pepper flakes, optional

Instructions

  1. Season salmon fillets on both sides with lemon pepper.
  2. In a bowl or liquid measuring cup, whisk together the soy sauce, brown sugar, water (or broth), oil, garlic powder, and red pepper flakes (if using) until sugar is dissolved.
  3. Place the salmon in a large ziploc bag or shallow dish and pour the marinade over the top, coating the salmon evenly. Refrigerate for at least 2 hours or up to 8 hours.
  4. Preheat grill to medium heat.
  5. Clean the grates well and lightly coat in oil. Grill the salmon (discarding excess marinade) for 5 to 7 minutes per side, depending on thickness, until the salmon flakes easily with a fork and the flesh looks opaque. Plan on about 10-14 minutes total cooking time for every inch of thickness (and add about 10 minutes for each additional inch). I find it’s easiest to flip on the grill using a large, flat, metal spatula versus tongs so the salmon doesn’t fall apart.
  6. Alternately, the salmon can be baked (or grilled in foil). After marinating, wrap each salmon fillet in a foil packet (I like to drizzle a tablespoon or so of marinade over the top before sealing the packet).
  7. Grill for about 15 minutes or bake in a 400 degree oven for about 15 minutes (again, exact time will depend on the thickness of the salmon).

Notes

Original Recipe: This recipe was originally posted in 2008 and has remained a favorite for good reason. Over the years, I’ve slightly adapted it to include garlic powder (or fresh garlic) directly in the marinade for deeper flavor infusion, rather than sprinkling it over the fillets. However, the original method works just fine if you prefer.

Salt: I’ve found the recipe typically doesn’t need additional salt, thanks to the soy sauce and lemon pepper seasoning. However, if you have a preference for more salt, feel free to season the fillets lightly before adding the marinade. Adjust to your taste!
