- Marinate whole chicken pieces: Cooking the chicken whole before slicing keeps it juicier and more flavorful than seasoning already-cut strips.



Ingredients notes
- Seasonings: The spice mix is made from common pantry items: salt, chili powder, garlic powder, cumin, paprika, oregano, onion powder, black pepper, and a pinch of cayenne. Smoked paprika adds a lovely smoky depth if you have it.
- Fresh lime juice: Freshly squeezed lime brightens the marinade and finishes the dish better than bottled juice. Add a squeeze at the end for extra brightness.
- Chicken: Use boneless, skinless chicken breasts or thighs. Thighs give more forgiving juiciness; breasts are leaner. Cooking times vary by cut and method (see instructions).

- 1 1/2 teaspoons table salt
- 1 1/2 teaspoons chili powder
- 1 teaspoon garlic powder
- 3/4 teaspoon ground cumin
- 3/4 teaspoon sweet or smoked paprika
- 3/4 teaspoon dried oregano
- 1/2 teaspoon onion powder
- 1/4 teaspoon black pepper
- 1/8 teaspoon cayenne pepper (optional)
- 2 tablespoons olive oil
- 2 tablespoons fresh lime juice
- 1 teaspoon liquid smoke (optional)
Chicken + Veggies
- 1 1/2 to 2 pounds boneless, skinless chicken breasts or thighs
- 3 medium bell peppers, cored, seeded, and sliced into strips
- 1 large white or yellow onion, sliced into half moons
- 1 tablespoon olive oil (for sautéing veggies)
To serve
- Corn or flour tortillas
- Shredded cheese, sour cream, guacamole, salsa, cilantro, extra lime wedges
Instructions
- In a small bowl, combine the salt, chili powder, garlic powder, cumin, paprika, oregano, onion powder, black pepper, and cayenne. Stir well.
- Reserve 1 1/2 teaspoons of the spice mix to season the vegetables later.
- In a separate bowl, mix the remaining spice blend with 2 tablespoons olive oil, 2 tablespoons fresh lime juice, and the liquid smoke if using. This becomes the marinade.
- If your chicken pieces are uneven in thickness, pound them to an even thickness so they cook uniformly. Place the chicken in a dish or a sealed bag and pour the marinade over it, tossing to coat. Refrigerate for at least 2 hours or up to 12 hours.
- Cook the chicken using your preferred method:
- Grill: Preheat grill to medium-high (about 375°F on a pellet grill). Grill breasts 4–6 minutes per side; thighs 7–8 minutes per side, until cooked through.
- Air fryer: Preheat to 375–380°F. Cook breasts 12–15 minutes, thighs 18–20 minutes, flipping once as needed.
- Oven: Preheat to 400°F. Arrange chicken on a foil-lined sheet pan and roast—times similar to grilling; flip halfway if desired.
- Skillet: Heat 2 tablespoons olive oil in a heavy skillet over medium-high heat until hot. Cook breasts 4–6 minutes per side; thighs 7–8 minutes per side.
- When chicken is done, tent with foil and let rest 5–10 minutes before slicing. Resting helps retain juices.
- While the chicken rests, heat 1 tablespoon olive oil in a 12-inch skillet over medium-high heat. Add the sliced onions and bell peppers and sprinkle with the reserved 1 1/2 teaspoons of seasoning. Sauté, stirring occasionally, until the vegetables are tender and slightly charred to your liking.
- Slice the rested chicken into thin strips and add them to the skillet with the vegetables. Toss to combine and warm everything together.
- Adjust seasoning with salt and pepper if needed. Serve the chicken and vegetables in warm tortillas with your favorite toppings.
Notes
Pounding the chicken: To even out thick chicken breasts, place each breast inside a freezer-safe bag and gently pound using the flat side of a meat mallet. This step is optional but helps create uniform slices and even cooking.
Adding mushrooms: If you want mushrooms, sauté them first in the skillet, remove them to a plate, then cook the onions and peppers. Return the mushrooms when you add the sliced chicken so everything finishes together.
