This classic layered pudding dessert, affectionately known as Robert Redford Dessert, is a timeless crowd-pleaser that deserves a permanent spot in every home chef’s recipe collection. Its irresistible combination of a crisp crust, creamy filling, and luscious pudding makes it a beloved treat for all ages and occasions.
For those unfamiliar with this delightful creation, allow me to introduce you to a culinary legend. This layered pudding dessert is a sensation, a true staple from my own childhood, and a dish my mother, a connoisseur of such sweet marvels, would often whip up to universal acclaim. It brings back a flood of fond memories, a taste of home and simpler times, making it more than just a dessert – it’s a comforting slice of nostalgia.

Rediscovering a Beloved Classic: The Robert Redford Dessert
It’s funny how some recipes fade from memory, only to be resurrected by a timely reminder. This particular beauty resurfaced for me when Lindsay, a wonderful reader and fellow blogger, shared photos of her rendition (which she called Sadie’s Dessert). She revealed her secret to its exceptional texture: using homemade pudding recipes, which yielded a remarkably thick and creamy consistency, making slicing an absolute dream compared to the often runnier boxed versions. Her glowing recommendation was all the encouragement I needed to bring this good old Robert Redford dessert back into my kitchen.
This dessert goes by many charming aliases, but for me, it will always be the “Robert Redford Dessert.” The exact origin of its intriguing name remains a delightful mystery – perhaps a nod to its classic good looks, smooth layers, or timeless appeal. Regardless of its moniker, its essence lies in its distinct layers, each contributing to a symphony of flavors and textures.
Crafting Perfection: My Personal Touches to a Timeless Recipe
While the original concept is flawless, I couldn’t resist adding a few personal modifications to elevate this already fantastic dessert. Firstly, I opted for a strictly chocolate pudding layer, foregoing the traditional mix or alternation with vanilla. This decision amplifies the rich, decadent chocolate experience, making each bite even more satisfying for true chocolate lovers. Secondly, I swapped out the store-bought whipped topping for freshly sweetened homemade whipped cream. This simple change makes a world of difference, adding a lighter, airier texture and a more natural, delicate sweetness that perfectly complements the other rich layers.
The reception from my family was nothing short of ecstatic. Their exclamations of joy were so enthusiastic, one might have thought Robert Redford himself had made a surprise appearance in our kitchen! Though, admittedly, my children, being of a younger generation, might have been even more thrilled by a visit from the Kratt brothers or the iconic R2D2. Their genuine delight, however, was all the validation I needed – this dessert truly is a classic that transcends generations.
One of the best aspects of preparing this layered wonder is the convenience it offers. Making the homemade pudding and other components ahead of time transforms this seemingly intricate dessert into a breeze to assemble. This make-ahead friendly nature makes it an ideal choice for entertaining, ensuring you can enjoy your guests rather than being tethered to the kitchen.

The Art of Presentation: Elevating a Simple Dessert
While entirely optional, the addition of elegant chocolate curls instantly elevates this humble, down-home pudding dessert to something a bit more gourmet. The visual appeal of finely shaved chocolate adds a touch of sophistication that can transform an ordinary dessert into a showstopper. That is, of course, until one of your children (who shall remain nameless to protect the innocent… or not-so-innocent) decides to repurpose a few of those delicate curls as high-velocity missiles aimed at their siblings. Suddenly, the gourmet illusion vanishes, replaced by the delightful chaos of family life. Welcome to my world!
Beyond the playful antics, this dessert is incredibly versatile. It’s robust enough for a casual family gathering, yet elegant enough for a formal dinner party. Its layered structure and varied textures – the crispness of the crust, the silkiness of the cream cheese, the richness of the pudding, and the lightness of the whipped cream – ensure that every spoonful is an adventure for the palate. It’s a dessert that truly has it all, offering both comfort and sophistication in equal measure.
Why Homemade Pudding Makes All the Difference
The heart of this Robert Redford Dessert truly lies in its pudding layer. While boxed instant pudding offers convenience, homemade chocolate pudding brings an unparalleled depth of flavor and a luxurious, dense texture that is simply unattainable with its shortcut counterparts. The process of making pudding from scratch allows for control over the sweetness and richness, resulting in a more refined and intensely chocolatey experience. The thicker consistency achieved with homemade pudding not only enhances the dessert’s overall mouthfeel but also ensures clean, elegant slices, maintaining the beautiful integrity of each layer.
If you’ve never ventured into making homemade pudding before, this recipe is a fantastic starting point. The reward for a little extra effort is a pudding that tastes infinitely superior – velvety smooth, profoundly chocolatey, and firm enough to hold its shape beautifully within the layers. Plus, the satisfaction of creating such a foundational component from scratch is a joy in itself.
Preparing the homemade pudding ahead of time, even up to two days in advance, is a smart strategy. This allows the pudding to cool completely and set properly, which is crucial for achieving that desirable firm consistency that makes slicing effortless and presentation impeccable. It’s a small step that yields significant benefits in the final outcome of your dessert.

Ingredients
Crust:
- ½ cup (113 g) butter, cut into 8 pieces
- 1 cup (142 g) flour
- 1 cup finely chopped or blended chopped pecans or walnuts
Cream Cheese Layer:
- 1 ½ cups (171 g) powdered sugar
- 12 ounces (340 g) cream cheese, softened to room temperature
- 2 cups heavy whipping cream + 1/4 cup powdered sugar
Pudding Layer:
- 4 cups homemade chocolate pudding
Extra:
- Reserved whipped cream and chocolate curls for garnish
Instructions
- For the crust, preheat the oven to 350 degrees F (175 degrees C). Place the flour in a medium bowl and cut in the butter with a pastry blender or fork until the mixture resembles coarse crumbs. Stir in the chopped nuts. Press the crust evenly into a 9×13-inch aluminum or glass pan and bake for 8-10 minutes until lightly golden and set. Remove the pan to a wire rack and let it cool completely before proceeding to the next steps. A fully cooled crust is essential for preventing the layers from melting or becoming soggy.
- For the cream cheese layer, in a medium bowl, combine the heavy whipping cream and 1/4 cup powdered sugar. Whip at high speed until stiff peaks form. Set aside about 1/4 of this sweetened whipped cream for the top garnish. In another large bowl, whip together the softened cream cheese and the remaining 1 ½ cups of powdered sugar until the mixture is smooth, light, and creamy, with no lumps. Gently fold in about 3/4 of the prepared sweetened whipped cream into the cream cheese mixture, taking care to mix slowly and gently so as not to deflate the whipped cream. This ensures a light and airy cream cheese layer. Set aside both the blended cream cheese mixture and the reserved sweetened whipped cream.
- To assemble the Robert Redford Dessert, begin by spreading the whipped cream cheese mixture evenly over the completely cooled crust. Ensure it reaches all edges of the pan. Next, carefully spread the chilled homemade chocolate pudding over the cream cheese layer, again making sure to cover the entire surface up to the edges. Finally, top the pudding layer with the remaining reserved sweetened whipped cream, creating a fluffy cloud. Refrigerate the dessert for at least 4 hours, or preferably overnight, to allow all the layers to set and meld together beautifully. This chilling time is crucial for the dessert to firm up and for the flavors to fully develop. When ready to serve, cut into generous slices and adorn with chocolate curls or finely shaved chocolate, if desired, for an elegant finish.
Notes
Pudding: An important note on the pudding – if you choose to make homemade pudding from scratch, this step can (and ideally should) be completed ahead of time, even up to two days in advance. This allows the pudding ample time to cool completely and set perfectly, ensuring the ideal texture for your layered dessert. For those who prefer a quicker alternative, you can substitute two small packages of instant chocolate pudding, prepared according to package directions using 4 cups of milk. However, for the ultimate creamy and rich experience, homemade is highly recommended.
