If you opt to use uncooked chicken, you will need about 1 ½ pounds of boneless, skinless chicken breasts. Cut the chicken into bite-size pieces and sauté them in the pan until cooked through during step #1, along with the onions, before adding the garlic.

Original Recipe: Over the years, this recipe has been refined to make it even simpler and more flavorful. The original version called for melting 3 tablespoons of butter, then cooking the onion and raw chicken pieces until the chicken was cooked through. Garlic and ¼ cup flour were then added and cooked for a couple of minutes before whisking in the broth and milk and simmering until thickened. This updated version streamlines the process for a smoother, lump-free gravy.
