Ingredients

  • 3-4 pounds pork roast cut into 2-3 inch chunks (see note)
  • ¼ cup chicken broth
  • ¼ cup fresh lemon juice
  • 2 teaspoons dried oregano
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder, or 2-3 cloves garlic, finely minced
  • 1 teaspoon coarse, kosher salt
  • ½ teaspoon black pepper, I use coarsely ground
  • Optional, for serving: flatbread or pitas, tzatziki sauce, lettuce, tomatoes, rice, fresh lemon wedges, etc.

Instructions

  1. Instant Pot: Place the pork in the insert of the Instant Pot. In a small bowl or liquid measuring cup, whisk together the chicken broth, lemon juice, dried oregano, onion powder, garlic powder (or minced garlic), kosher salt, and black pepper. Pour this mixture over the pork, turning the pork pieces a few times to ensure they are well-coated.
  2. Secure and lock the lid of the Instant Pot. Cook on high pressure for 50 minutes (select Manual or Pressure Cook and adjust time to 50 minutes). The Instant Pot will start automatically and beep when cooking is complete. Allow the pressure to naturally release for 10 minutes before carefully performing a manual quick release for any remaining pressure. Once safe to open, shred the pork with two forks directly in the Instant Pot and keep it warm until ready to serve.
  3. Slow Cooker: Place the pork in the insert of a 5- or 6-quart slow cooker. In a small bowl or liquid measuring cup, whisk together the chicken broth (increase to 1 cup for slow cooker), lemon juice, dried oregano, onion powder, garlic powder (or minced garlic), kosher salt, and black pepper. Pour this mixture over the pork, turning the pork pieces a few times to coat them thoroughly.
  4. Cover the slow cooker and cook on low for 8-9 hours, or on high for 4-5 hours, until the pork is exceptionally tender and easily shreddable. Shred the pork with two forks directly in the slow cooker and keep it warm until ready to serve.
  5. Serve the tender Greek pork with warm flatbread or pitas, alongside fresh tzatziki, crisp lettuce, and diced tomatoes. Alternatively, enjoy it over fluffy rice or as a flavorful topping for your favorite salad. Garnish with fresh lemon wedges if desired.

Pork Selection: I’ve consistently achieved excellent results using a pork loin or sirloin roast (often found in 4-packs at warehouses like Costco). A pork shoulder roast (Boston butt) should also work beautifully – just be sure to trim any excessive fat if you prefer. While pork tenderloin is a delicious cut, my hunch is that it might be too lean for this recipe and may not achieve the same fall-apart tenderness without drying out.
